Before you start

Before you begin, ensure you have all your ingredients measured and ready. Bring a large pot of water to a boil, and have your colander handy in the sink.

If you are using pre-shredded cheese, ensure it is at room temperature for the best melting performance. Clear a space on your counter for the mixing bowl and prepare your baking dish by lightly greasing it if necessary to ensure easy serving later.

Ingredients at a glance (4)
  • 1 lb spaghetti
  • 24 oz bolognese sauce
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup provolone cheese, shredded

Instructions

Pasta Preparation

  1. Boil the pasta
Bring a large pot of salted water to a rolling boil. Add the spaghetti and cook according to package instructions until al dente. Drain the pasta thoroughly using a colander.
Look for pasta is tender but still firm to the bite
Tip Save a small amount of pasta water to adjust the sauce consistency if needed.

The spaghetti should be boiled until it is al dente, meaning it is tender but still retains a slight bite. Once drained, it should be loose and ready to be coated in the sauce immediately. Check that the water has been fully removed to prevent the sauce from becoming watery or diluted.

Sauce Integration

  1. Combine and assemble
In a large mixing bowl, toss the cooked spaghetti with the bolognese sauce until every strand is evenly coated. Transfer the mixture to an oven-safe baking dish or skillet, spreading it out into an even layer.
Look for sauce is evenly distributed over the pasta
Tip Ensure the sauce is warm before mixing for better coverage.

The pasta and bolognese sauce should be thoroughly combined in the mixing bowl. Every strand of spaghetti must be coated in the rich, meaty sauce.

The texture should look glossy and cohesive, with no dry patches of pasta visible before it is transferred to the baking dish for the final assembly.

Final Broiling

  1. Bake and melt
Sprinkle the shredded mozzarella and provolone cheeses over the top of the pasta. Place under a preheated broiler for 3 to 5 minutes, or until the cheese is melted, bubbly, and slightly browned. Ensure the ground meat in the sauce reaches an internal temperature of 160°F (71°C).
Look for cheese is golden brown and bubbling
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Watch the broiler closely to prevent the cheese from burning.

The cheese should be evenly spread across the top of the pasta. After broiling, the surface should be beautifully browned and bubbling. The aroma should be savory and inviting, and the cheese should stretch significantly when tested, indicating it is properly melted and ready for serving.

Common mistakes

Avoid overcooking the pasta in the initial boiling stage; since it will be heated again under the broiler, you want it to remain slightly firm, or al dente.

Another common mistake is neglecting the broiler; keep a close eye on the dish while it is in the oven, as cheese can transition from perfectly browned to burnt in a matter of seconds. Finally, do not overcrowd the baking dish, as this can lead to uneven melting.

How to tell it’s done

The dish is done when the cheese on top is fully melted, bubbling, and shows attractive golden-brown spots. The pasta should be heated through, and the bolognese sauce should be simmering beneath the cheese layer.

For safety, ensure the sauce, which contains ground meat, reaches a minimum internal temperature of 160°F (71°C) when tested with a food thermometer. The cheese should be soft and stretchy when lifted with a fork.

  • Ground meat: 160°F (71°C) in the thickest part
