Before you start

Before starting, gather all ingredients. If the chicken breasts are very thick, pound them to an even 1-inch thickness so they cook evenly. Slice the onions into thin strips. Measure the mozzarella and have the garlic herb butter ready.

No need to brown the chicken or sauté the onions—everything goes into the slow cooker as is. This recipe is truly dump-and-go, so there is no prep cooking required. Just set out the slow cooker and you are ready to layer.

Ingredients at a glance (5)
  • 1 1/2 lb boneless skinless chicken breasts
  • 2 medium yellow onions, thinly sliced
  • 1 can (10.5 oz) condensed French onion soup
  • 2 cups shredded whole-milk mozzarella cheese
  • 2 tbsp garlic herb butter

Instructions

Layer and Pour

  1. Layer the Chicken and Onions
Place the chicken breasts in the bottom of a 6-quart slow cooker in a single layer. Scatter the sliced onions evenly over the top of the chicken.
Look for The chicken is covered with a thick layer of raw onion slices.
Tip If the chicken breasts are very thick, pound them to an even thickness so they cook evenly.
  2. Pour the Soup
Pour the condensed French onion soup evenly over the onions and chicken, making sure to cover as much surface as possible.
Look for The soup pools around the chicken and onions, coating them lightly.
Tip Do not add water or broth; the soup is concentrated and will create enough liquid as the onions release moisture.

After this phase, the slow cooker contains a neat layer of chicken breasts, covered with a mound of raw onion slices, and the soup has been poured over the top.

The onions may not be fully submerged, but that is fine—they will wilt and release moisture as they cook. The chicken should be mostly covered by the soup and onions. This is the 'dump' stage, so everything should look fresh and raw, with no cooking yet.

Slow Cook and Melt

  1. Top with Cheese and Butter
Sprinkle the shredded mozzarella cheese evenly over the top of the soup and onions. Dot the surface with the garlic herb butter.
Look for The cheese forms a white blanket over the pot, with small pats of butter visible.
Tip Using whole-milk mozzarella gives a creamier melt than part-skim.
  2. Slow Cook Until Tender
Cover the slow cooker and cook on LOW for 6 hours, or on HIGH for 3 to 4 hours, until the chicken is tender and shreds easily with a fork. The internal temperature of the thickest part of the chicken should reach 165°F (74°C).
Look for The sauce is bubbling gently around the edges, and the chicken pulls apart easily.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Resist lifting the lid during cooking—each peek lets out heat and adds time.

During this phase, the slow cooker is covered and left to work. After a few hours, the aroma of sweet onions and garlic will fill the kitchen. The cheese will melt into a golden, bubbly layer on top, and the sauce will be simmering gently. The chicken should be fork-tender and easily pull apart. The internal temperature must reach 165°F (74°C). The sauce should be creamy and thick, not watery.

Shred and Serve

  1. Shred the Chicken
Using two forks, shred the chicken directly in the slow cooker. Stir the shredded meat into the sauce and onions until well combined.
Look for The chicken separates into thick, juicy strands coated in a creamy, onion-flecked sauce.
Tip For larger chunks, shred less; for finer texture, shred more thoroughly.
  2. Serve and Enjoy
Serve the creamy mozzarella French onion chicken hot, spooned over cooked pasta, rice, or mashed potatoes. Garnish with fresh herbs if desired.
Look for Each spoonful is rich, creamy, and full of sweet caramelized onions and stretchy cheese.
Tip Let the dish rest for 5 minutes before serving so the sauce thickens slightly.

After shredding, the chicken is coated in a rich, creamy sauce studded with soft, caramelized onion ribbons. The mozzarella is fully incorporated, giving the sauce a silky, stretchy texture. The dish looks like a hearty, comforting stew. Serve immediately, and enjoy the satisfying aroma and taste.

Common mistakes

One common mistake is lifting the lid too often to check on the chicken. Each time the lid is lifted, heat escapes and extends the cooking time. Another mistake is adding extra liquid—the soup and onions provide plenty of moisture, and additional broth will make the sauce watery.

Also, do not add the mozzarella at the beginning; it can curdle or become rubbery if cooked too long. Finally, resist the urge to shred the chicken too early; it needs the full cook time to become tender enough to shred cleanly.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) in the thickest part, and shreds easily with a fork. The sauce will be bubbling gently around the edges, and the onions will be soft and translucent, with some golden caramelized bits.

The mozzarella should be fully melted and incorporated into the sauce. If the sauce seems thin, let it sit uncovered for 10 minutes to thicken, or stir in a slurry of 1 tablespoon cornstarch and 2 tablespoons water.

  • Poultry: 165°F (74°C) in the thickest part
