Tips for success
For the creamiest result, use full-fat cream cheese and whole-milk mozzarella. Low-fat versions can turn grainy or separate. If you prefer a lighter sauce, you can reduce the cream cheese by half, but the texture will be less rich.
To add a smoky depth, use a roasted red pepper sauce that includes smoked paprika or chipotle. For a touch of freshness, stir in some chopped parsley or basil just before serving (not shown in the video).
This recipe is versatile: you can swap the chicken for turkey or even use leftover rotisserie chicken (add it in the last 30 minutes). If you want more vegetables, add a cup of frozen peas or spinach during the last 30 minutes of cooking. For a gluten-free version, use gluten-free pasta and ensure the sauce is gluten-free. The dish is best served fresh, but leftovers make a great lunch the next day.
Variations
- Spicy Sausage Version: Swap the chicken for 1 pound of Italian sausage (casings removed) and brown it in a skillet before adding to the slow cooker. Use spicy red pepper sauce and add a pinch of red pepper flakes for extra heat. Reduce the cream cheese to 4 ounces to balance the richness.
- Vegetarian Option: Omit the chicken and add 2 cups of halved cremini mushrooms and 1 cup of frozen peas to the slow cooker. Use vegetable-based red pepper sauce and proceed as directed. The mushrooms will add a meaty texture and umami flavor.
- Cheesy Pesto Twist: Replace the smoky red pepper sauce with 1 cup of basil pesto mixed with 1 cup of heavy cream. Omit the cream cheese and use 3 cups of shredded mozzarella. Stir in a handful of cherry tomatoes during the last 30 minutes for a fresh burst of flavor.
- Buffalo Chicken Shells: Toss the cubed chicken with 1/2 cup of buffalo sauce before adding to the slow cooker. Replace the red pepper sauce with 1 cup of ranch dressing and 1 cup of chicken broth. Use 8 ounces of cream cheese and 2 cups of shredded cheddar instead of mozzarella. Serve with celery sticks.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Add a splash of broth when reheating to restore creaminess.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in the microwave or on the stovetop over medium heat, adding a little broth or water to loosen the sauce. Stir occasionally until heated through.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The pasta will absorb some of the sauce, so when reheating, add a splash of chicken broth or water to loosen it. Reheat in the microwave in 30-second intervals, stirring in between, or in a saucepan over medium heat until warmed through. For best texture, avoid overcooking when reheating, as the pasta can become soft.
This recipe can be assembled up to 24 hours in advance. Layer the ingredients in the slow cooker insert, cover, and refrigerate. When ready to cook, add an extra 30 minutes to the cooking time to account for the cold start.
Alternatively, cook the dish completely, let it cool, and refrigerate for up to 4 days. Reheat gently before serving. The flavors will continue to meld, making it even more delicious the next day.
Serving ideas
Serve this creamy chicken and pasta dish straight from the slow cooker for a casual family dinner, or plate it onto a white porcelain dish for a more polished presentation.
A side of garlic bread or a simple green salad with a tangy vinaigrette balances the richness of the sauce. The dish is hearty enough to be a complete meal on its own, but it also pairs well with roasted vegetables or a crusty baguette.
For a fun twist, spoon the mixture into individual ramekins, top with extra mozzarella, and broil until bubbly for a crispy cheese topping. Or, use the leftovers as a filling for stuffed peppers or as a topping for baked potatoes.
This recipe is so versatile that you can enjoy it in many ways. However you serve it, the combination of tender chicken, pasta, and smoky red pepper cream is sure to satisfy.

Creamy Mozzarella Chicken Red Pepper Shells Crockpot Dinner

Ingredients
- 2 lb boneless skinless chicken breasts, cut into bite-sized cubes
- 12 oz medium conchiglie pasta shells
- 2 cups smoky roasted red bell pepper cream sauce
- 8 oz cream cheese, softened and cut into cubes
- 2 cups shredded whole-milk mozzarella cheese
Instructions
- Place the cubed chicken breasts evenly in the bottom of a 7-quart slow cooker. Spread the pasta shells over the chicken, then pour the smoky roasted red bell pepper cream sauce over the top, making sure the pasta is mostly covered. Dot the surface with the cream cheese cubes, then sprinkle the shredded mozzarella evenly over everything.
- Cover the slow cooker with its lid. Cook on LOW for 4 hours, or on HIGH for 2 to 3 hours, until the chicken is cooked through and the pasta is tender. Do not stir during cooking, as this can break up the pasta and make it mushy.
- After the cooking time, check that the chicken is cooked through by inserting an instant-read thermometer into a few pieces; it should read at least 165°F (74°C). The pasta should be tender but still hold its shape. If the pasta is still firm, cover and cook for an additional 15 to 30 minutes.
- Once the chicken is cooked and the pasta is tender, stir the mixture gently to combine the melted cream cheese and mozzarella into the sauce. Be careful not to mash the pasta. The sauce should be creamy and coat the shells and chicken evenly.
- Spoon the creamy chicken and pasta onto plates or into bowls. For the best texture, serve right away while the cheese is hot and stretchy. Garnish with a little extra black pepper or fresh herbs if desired (not shown in the video).
