Before you start
Before you start, make sure you have a 6-quart slow cooker. If you have time, trim any excess fat from the chicken breasts and cut the cauliflower into uniform florets so they cook evenly.
Measure out the soup, cheese, and butter so you can add them quickly. Cook the penne pasta just before serving, or while the slow cooker is finishing up, so it stays hot.
Ingredients at a glance (6)
- 1 1/2 lb boneless skinless chicken breasts
- 1 head cauliflower, cut into florets
- 1 can (10.5 oz) condensed cream of broccoli soup
- 2 cups shredded whole-milk mozzarella cheese
- 2 tbsp garlic herb butter, cut into pats
- 12 oz penne pasta, cooked al dente
Instructions
Assemble the Slow Cooker
- Layer the Chicken and CauliflowerPlace the chicken breasts in the bottom of a 6-quart slow cooker in a single layer. Scatter the cauliflower florets around and over the chicken, distributing them evenly.Look for The chicken and cauliflower should fill the bottom of the slow cooker in an even layer.Tip For even cooking, try to keep the chicken breasts in a single layer and not overlapping too much.
- Add the Soup and CheeseSpoon the condensed cream of broccoli soup over the chicken and cauliflower, spreading it gently to cover as much as possible. Sprinkle the shredded mozzarella cheese evenly over the top.Look for The soup and cheese will create a thick, creamy layer over the chicken and cauliflower.Tip No need to stir at this point; the slow cooker will blend everything as it cooks.
- Top with Garlic Herb ButterDot the garlic herb butter over the top of the cheese and soup mixture, placing the pats in a few different spots.Look for The butter will melt and infuse the sauce with garlic and herb flavor.Tip If you don't have garlic herb butter, use regular butter and add a pinch of garlic powder and dried herbs.
At the end of this phase, you will have a neatly layered slow cooker with chicken breasts on the bottom, cauliflower scattered around, and a thick layer of soup and cheese on top.
The garlic herb butter pats are visible on the surface. The ingredients should look colorful and inviting, with the white cauliflower and golden cheese contrasting against the chicken.
Slow Cook Until Tender
- Cook on LowCover the slow cooker and cook on low for 4 to 5 hours, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C) and the cauliflower is tender.Look for The sauce will be bubbling gently around the edges and the chicken will be fork-tender.Safe temperature 165°F (74°C) internal temperature (poultry)Tip Avoid lifting the lid during cooking to keep the heat and moisture inside.
- Shred the ChickenOnce the chicken is cooked through, use two forks to shred the chicken breasts directly in the slow cooker. Stir gently to combine the shredded chicken with the cauliflower and sauce.Look for The chicken should shred easily and be coated in the creamy sauce.Tip If the sauce seems too thick, you can stir in a splash of chicken broth or milk to loosen it.
After 4 to 5 hours on low, the slow cooker will be filled with a bubbling, aromatic sauce. The chicken will be cooked through and shred easily with a fork, and the cauliflower will be tender. The kitchen will smell of garlic, herbs, and melted cheese. The sauce will be creamy and slightly thickened, with visible bits of melted mozzarella.
Finish and Serve
- Cook the PastaMeanwhile, bring a large pot of salted water to a boil and cook the penne pasta according to package directions until al dente. Drain well and return to the pot.Look for The pasta should be tender but still firm to the bite.Tip Reserve a cup of pasta water before draining, in case you need to loosen the sauce later.
- Serve Over PastaDivide the cooked penne among serving bowls or plates. Spoon the creamy mozzarella cauliflower chicken over the top. Serve hot.Look for The sauce should be thick, creamy, and full of melted cheese.Tip For extra richness, sprinkle with additional shredded mozzarella or fresh herbs before serving.
Once the chicken is shredded and stirred into the sauce, the dish will have a hearty, chunky texture. The sauce will coat the back of a spoon, and the cheese will be stretchy.
When served over hot penne, the pasta will be al dente and the creamy chicken mixture will be spooned generously on top. The final dish should look rich, comforting, and ready to eat.
Common mistakes
One common mistake is lifting the lid too often during cooking, which lets out heat and extends the cooking time. Another is overcooking the chicken, which can make it dry; check the temperature with an instant-read thermometer.
Also, avoid adding too much liquid, as the soup and cheese provide enough moisture. Finally, don't skip shredding the chicken—it helps distribute the flavor and creates a better texture.
How to tell it’s done
The dish is done when the chicken reaches an internal temperature of 165°F (74°C) and the cauliflower is fork-tender. The sauce will be bubbly and thickened, and the cheese will be fully melted. If you insert a fork into the chicken, it should twist easily. The cauliflower should offer no resistance when pierced.
- Poultry: 165°F (74°C) in the thickest part
