Before you start

Before beginning, ensure all ingredients are prepped and ready for use. Slice the mushrooms evenly to ensure they cook at the same rate. Have the pasta water boiling and the sauce ingredients measured out.

Having everything organized will allow for a smooth cooking process, as the steps move quickly once the meat begins to brown in the skillet.

Ingredients at a glance (6)
  • 1 lb ground beef
  • 8 oz mushrooms, sliced
  • 12 oz pasta shells
  • 1 cup heavy cream
  • 1/2 cup tomato puree
  • fresh parsley, for serving

Instructions

Browning the base

  1. Brown the protein and mushrooms
Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it into small pieces with a wooden spoon, until browned. Add the sliced mushrooms to the skillet and cook until they have softened and released their liquid. Ensure the beef reaches an internal temperature of 160°F (71°C).
Look for The meat is browned and the mushrooms are tender.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Avoid overcrowding the pan to ensure the mushrooms brown rather than steam.

The meat should be deeply browned and fragrant, with the mushrooms reduced in size and tender. The pan will have a rich, savory foundation ready for the sauce.

Ensure the beef is fully browned and the mushrooms have released their moisture before proceeding to the next step of the recipe.

Boiling the pasta

  1. Prepare the pasta
While the meat and mushrooms cook, bring a large pot of salted water to a boil. Add the pasta shells and cook according to the package instructions until al dente. Drain the pasta thoroughly using a colander, reserving a small amount of pasta water if needed to adjust the sauce consistency later.
Look for The pasta is tender but firm to the bite.
Tip Salt the water generously to ensure the pasta is seasoned throughout.

The pasta should be cooked until tender but still holding its shape. Check a piece to ensure it is cooked through without becoming mushy or falling apart. Drain the pasta carefully and keep it warm until the sauce is ready to be combined with the shells.

Creating the sauce

  1. Combine and finish
Lower the heat on the skillet. Pour the tomato puree and heavy cream into the pan with the beef and mushrooms. Stir to combine until the sauce is smooth and simmering. Add the cooked pasta shells to the skillet and toss well to coat every shell in the creamy sauce. Garnish with fresh chopped parsley before serving.
Look for The sauce is thick, glossy, and coats the pasta evenly.
Tip If the sauce becomes too thick, add a splash of reserved pasta water to loosen it.

The sauce should be uniform in color and texture, clinging to the pasta shells. It should smell creamy and savory, with the parsley adding a fresh, aromatic finish. The final consistency should be glossy and thick enough to coat the back of a spoon perfectly before serving.

Common mistakes

A common mistake is overcrowding the skillet, which causes the mushrooms to steam instead of brown, leading to a watery sauce. Another error is overcooking the pasta; ensure it is drained promptly once it reaches al dente.

Finally, adding the cream to a pan that is too hot can cause it to curdle, so reduce the heat before incorporating the liquids.

How to tell it’s done

The dish is done when the sauce is thick enough to coat the back of a spoon and the pasta is cooked to an al dente texture.

The ground beef must reach an internal temperature of 160°F (71°C) during the initial browning phase. The final mixture should be hot, glossy, and well-integrated, with no separation in the creamy sauce.

  • Ground meat: 160°F (71°C) in the thickest part
