Before you start

Before beginning, ensure all vegetables are thoroughly washed and peeled if desired. Use a sharp chef's knife to dice the potatoes into consistent one-inch cubes to ensure they cook through evenly.

Slice the smoked sausage into uniform rounds, roughly the same thickness as the potato cubes. Have the cheddar cheese freshly shredded, as freshly grated cheese melts into a smoother, creamier layer than pre-shredded cheese containing anti-caking agents.

Ingredients at a glance (3)
  • 2 lbs Russet potatoes, peeled and diced
  • 1 lb smoked sausage, sliced into rounds
  • 2 cups cheddar cheese, shredded

Instructions

Preparation and Initial Assembly

  1. Prepare the Base
Preheat the oven to 375°F (190°C). In a large bowl, combine the diced potatoes and sliced smoked sausage. Transfer the mixture into a glass baking dish, spreading it out into a single, even layer to ensure consistent heat distribution during baking.
Look for Potatoes and sausage slices are evenly mixed and arranged in the dish.
Tip Cut the potatoes into uniform one-inch cubes so they cook at an even rate.

At the end of this phase, the diced potatoes and sausage slices are evenly distributed across the bottom of the glass baking dish. The mixture should look uniform and ready for the oven. Check that the potato cubes are consistent in size to ensure they cook evenly and soften simultaneously under the heat.

Covered Steaming Phase

  1. Bake Covered
Cover the glass baking dish tightly with aluminum foil to trap moisture. Place it into the preheated oven and bake for 30 minutes until the diced potatoes become fork-tender and the smoked sausage renders its savory, rich juices throughout the casserole dish.
Look for Potatoes soften and steam gathers beneath the foil.
Tip Ensure the foil is crimped securely around all edges of the dish.

When the foil is carefully lifted, a burst of savory steam should emerge, and the potatoes should yield easily when tested with a fork tip.

The aroma of smoked sausage should fill the air. If the potatoes still feel firm in the center, replace the foil tightly and return the dish to the oven for an extra five minutes.

Golden Cheddar Finish

  1. Melt the Cheddar
Remove the foil carefully and scatter the shredded cheddar cheese evenly across the top. Return the dish to the oven uncovered for 15 minutes, until the sausage reaches 160°F (71°C) and the cheese turns completely bubbly and melted. Rest 5 minutes before serving.
Look for Cheddar cheese is thoroughly melted, bubbling, and golden in patches.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Letting the casserole rest slightly helps the melted cheese set for easier scooping.

The finished casserole displays a rich, bubbling layer of melted cheddar cheese across the entire surface. The edges should look slightly caramelized, and the sausage rounds should be glistening hot. Verify that the cheese pull is elastic and fluid when scooped with a serving spatula.

Common mistakes

A common mistake is cutting the potatoes into pieces that are too large, which prevents them from softening properly within the specified cooking time.

Another error is failing to cover the dish tightly with foil during the initial phase; without an airtight seal, moisture escapes, leaving the potatoes dry and tough. Additionally, slicing the sausage too thin can cause it to dry out before the potatoes have finished tenderizing.

How to tell it’s done

The bake is finished when the potatoes are fork-tender, meaning a fork slides into them with no resistance. The sausage must reach an internal temperature of at least 160°F (71°C) to be safely consumed.

The cheddar cheese on top should be completely melted, glossy, and golden brown in spots. Always allow the dish to rest for 5 minutes before scooping to let the cheese settle and prevent burns from trapped steam.

  • Ground meat: 160°F (71°C) in the thickest part

Coming up in Part 3: common questions

  • Can other types of cheese be used instead of cheddar?
  • Why are the potatoes still firm after the covered baking step?
  • Is it necessary to peel the potatoes before baking?
