Tips for success
For an extra layer of depth, you can roast the garlic cloves before adding them to the slow cooker. This brings out a sweeter, more complex flavor that pairs beautifully with the creaminess of the cauliflower.
If you prefer a lighter garlic flavor, simply reduce the number of cloves or mince them finely before adding. Experimenting with different types of cheese, such as smoked gouda or pepper jack, can also add a unique twist to the dish depending on your flavor preferences.
If you find that the mash is too thin after whipping, you can leave the lid of the slow cooker off for the last 15 minutes of cooking to allow some of the moisture to evaporate.
Alternatively, if it is too thick, add a small amount of warm milk or heavy cream until you reach your desired consistency. Always taste the mash before serving and adjust the seasoning with kosher salt and freshly cracked black pepper to suit your personal preference.
Variations
- Loaded Herb and Garlic: Add two tablespoons of fresh chopped parsley and one teaspoon of dried thyme to the mash while whipping. This variation introduces a fresh, earthy flavor profile that complements the richness of the cheese and bacon perfectly.
- Spicy Jalapeño Cheddar: Fold in one finely diced, seeded jalapeño along with the cheddar cheese. This variation adds a subtle, warming heat that balances the creaminess of the cauliflower and provides a nice contrast to the salty bacon.
Storage and make-ahead
- Fridge
- Store in an airtight container for up to 3 days.
- Freezer
- Freezing is not recommended as the texture may become watery after thawing.
- Reheat
- Reheat on the stovetop over low heat or in the microwave, stirring occasionally.
Store any leftovers in an airtight container in the refrigerator. Ensure the mash has cooled to room temperature for no more than two hours before placing it in the fridge to maintain food safety. It will keep well for up to three days. When reheating, do so gently over low heat on the stovetop, stirring frequently to prevent scorching, or use a microwave-safe bowl, heating in short bursts and stirring in between until warmed through.
This dish is excellent for making ahead of time. You can prepare the cauliflower mash up to the point of adding the cheese and bacon. Let it cool completely, then store it in the refrigerator. When you are ready to serve, reheat the mash on the stovetop or in the slow cooker until hot, then fold in the cheese and bacon just before serving. This ensures the cheese remains perfectly melted and the bacon retains its desired texture.
Serving ideas
Serve this cauliflower mash as a hearty side dish alongside roasted meats, such as chicken or steak, to create a balanced and satisfying meal. Its creamy texture makes it a perfect alternative to traditional mashed potatoes, and it pairs beautifully with grilled vegetables or a crisp green salad.
Consider serving it in individual bowls for an elegant presentation, topped with a little extra sprinkle of chives and crispy bacon for a professional finish that will impress any guest.
The versatility of this dish allows it to be served at everything from casual family dinners to more formal gatherings. Because it holds heat well, it is also a great option for potlucks or holiday meals where you need a reliable side dish that stays delicious even after sitting for a while.
If you are serving a larger crowd, you can easily double the recipe, provided your slow cooker has the capacity to accommodate the larger volume of ingredients.

Creamy Loaded Crockpot Cauliflower Mash

Ingredients
- 2 large heads cauliflower florets, chopped
- 4 cloves garlic cloves, peeled
- 1 stick butter
- 4 oz cream cheese
- 1 cup sharp cheddar cheese, shredded
- 6 slices bacon, cooked and crumbled
- 2 tbsp fresh chives, finely chopped
Instructions
- Place the chopped cauliflower florets into the ceramic slow cooker. Add the garlic cloves, the stick of butter, and the cream cheese on top of the cauliflower to ensure even melting during the cooking process.
- Cover the slow cooker with its lid and set it to cook on HIGH for three hours. The cauliflower should be completely fork-tender when finished. Once cooked, use an immersion blender or a sturdy potato masher to whip the mixture inside the pot until it reaches a smooth and creamy consistency.
- Fold in the shredded sharp cheddar cheese and half of the crumbled bacon directly into the warm cauliflower mash until the cheese is melted and fully incorporated. Transfer the mash into a serving bowl and garnish with the remaining bacon and fresh chives before serving immediately.
