Tips for success
For the best texture, cook the pasta just until al dente—it will finish cooking slightly when tossed with the hot sauce. Reserve a generous cup of pasta water; you may not need all of it, but it's better to have extra.
When adding the pasta water, do it in small splashes while tossing, so you can stop when the sauce reaches the right consistency. The sauce should coat the pasta like a silky glaze, not pool in the pan.
Taste before serving and adjust the salt and pepper—parmesan adds saltiness, so you may not need much extra. If the sauce feels too rich, add a little more lemon juice to brighten it.
For a touch of heat, a pinch of red pepper flakes goes well with the lemon. This dish is best eaten immediately, but if you have leftovers, reheat gently with a splash of milk or cream to restore the silky texture.
Variations
- Add Protein: Stir in cooked chicken, shrimp, or crispy pancetta when you add the pasta. The sauce will coat them perfectly, making it a heartier meal. If using shrimp, cook them in the skillet before the onion and set aside.
- Vegetable Boost: Sauté mushrooms, peas, or spinach with the onion. For greens, stir in a handful of baby spinach at the end and let it wilt. This adds color and texture without overwhelming the lemon flavor.
- Spicy Kick: Add a pinch of red pepper flakes with the garlic for a subtle heat. Or finish with a drizzle of chili oil before serving. The heat contrasts nicely with the creamy sauce.
- Herb Swap: Replace parsley with fresh basil or chives. Basil adds a sweet, aromatic note, while chives give a mild onion flavor. Both work well with lemon and garlic.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Freezer
- Freezing is not recommended; the cream sauce may separate upon thawing.
- Reheat
- Reheat gently in a skillet over low heat with a splash of milk or pasta water, stirring until warmed through.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The sauce will thicken as it cools. To reheat, warm gently in a skillet over low heat with a splash of milk or reserved pasta water to loosen the sauce. Avoid microwaving on high, which can make the cream separate.
The sauce can be made up to 2 days ahead and stored in the refrigerator. Reheat gently and toss with freshly cooked pasta. The lemon flavor will mellow slightly, so you might add a little extra juice and zest before serving. Cook the pasta fresh for the best texture.
Serving ideas
Serve the spaghetti hot, straight from the skillet, with extra grated parmesan and a crack of black pepper on top. A side of crusty bread is perfect for soaking up any extra sauce.
For a complete meal, add a simple green salad with a lemony vinaigrette—the brightness echoes the pasta's flavor.
This dish is satisfying on its own, but it also pairs well with grilled chicken or shrimp if you're looking for more protein.
The creamy sauce is rich, so keep the sides light. A glass of crisp white wine, like Pinot Grigio or Sauvignon Blanc, complements the lemon and garlic beautifully.

Creamy Lemon Garlic Spaghetti in 12 Minutes

Ingredients
- 12 oz spaghetti
- 1 tbsp olive oil
- 2 tbsp butter
- 1/2 cup finely diced yellow onion
- 3 cloves minced garlic
- 1 cup heavy cream
- 2 tbsp fresh lemon juice
- 1 tsp grated lemon zest
- 1/2 tsp salt
- 1/2 cup grated parmesan cheese
- 1/2 cup reserved pasta water
- 2 tbsp chopped fresh parsley
- Freshly cracked black pepper, to taste
Instructions
- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve about 1/2 cup of the pasta water before draining.
- Drain the spaghetti in a colander, but do not rinse it. Keep the reserved pasta water nearby.
- In a large skillet, heat the olive oil and butter over medium heat. Add the finely diced onion and cook until soft and translucent, about 3 minutes. Add the minced garlic and cook for 30 seconds until fragrant.
- Pour the heavy cream into the skillet. Add the fresh lemon juice, lemon zest, salt, and grated parmesan. Stir and bring to a gentle simmer, letting the sauce thicken slightly.
- Add the drained spaghetti to the skillet with the sauce. Toss with tongs or a wooden spoon until every noodle is coated.
- Add the reserved pasta water, a little at a time, while tossing. The starch in the water helps the sauce cling to the pasta and creates a glossy finish.
- Season with freshly cracked black pepper and sprinkle with chopped parsley. Toss once more and serve immediately.
