Before you start

Before starting, boil the potatoes until fork-tender and keep them hot. Dice the chicken breast into small, even pieces. Chop the onion, green peppers, and red bell pepper into similar-sized dice. Grate the kaşar cheese if not pre-shredded. Measure out all other ingredients. Have a 9x13-inch glass baking dish ready. Preheat the oven to 375°F (190°C) when you are ready to bake.

Ingredients at a glance (17)
  • 4 large hot boiled potatoes
  • 2 tbsp butter
  • 1/2 cup grated kaşar cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 500 g diced chicken breast
  • 1 chopped onion
  • 2 green peppers, diced
  • 1 red bell pepper, diced
  • 2 tbsp olive oil
  • 1 tbsp tomato paste
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups milk
  • 1 pinch ground nutmeg
  • 1 1/2 cups shredded kaşar cheese
  • Thin julienned red and green pepper strips, for garnish, to taste

Instructions

Phase 1: Building the Base

  1. Make the Mashed Potato Base
Place the hot boiled potatoes in a large bowl. Add the butter, grated kaşar cheese, salt, and black pepper. Mash everything together until smooth and well combined. Spread the mashed potatoes evenly in the bottom of a 9x13-inch glass baking dish, smoothing the top with a spatula.
Look for The potatoes should be fluffy and well seasoned, with no large lumps.
Tip For a smoother mash, use a potato ricer. Make sure the potatoes are still hot when you mash them so the butter and cheese melt in.
  2. Cook the Chicken Mixture
Heat the olive oil in a large skillet over medium-high heat. Add the diced chicken breast and cook until no longer pink, about 5-7 minutes. Add the chopped onion, diced green peppers, and diced red bell pepper. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes. Stir in the tomato paste and cook for 1 minute more.
Look for The chicken should be cooked through and the vegetables tender, with the tomato paste coating everything evenly.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Cut the chicken and vegetables into similar-sized pieces so they cook evenly. Don't overcrowd the skillet; cook in batches if needed.

At the end of this phase, you'll have a smooth, well-seasoned mashed potato layer spread evenly in the baking dish, and a skillet full of savory chicken and peppers cooked until the chicken is no longer pink and the vegetables are tender.

The chicken should be cooked through, reaching an internal temperature of 165°F (74°C). The mixture should be fragrant with onion and peppers, and the tomato paste should have deepened the color.

Phase 2: Layering and Saucing

  1. Assemble the Casserole Layers
Spread the cooked chicken mixture evenly over the mashed potato base in the baking dish. Use a spatula to press it down gently into an even layer.
Look for The chicken layer should completely cover the potatoes.
Tip Make sure the chicken layer is evenly distributed so every serving gets a good amount.
  2. Make the Béchamel Sauce
In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly. Gradually whisk in the milk, a little at a time, until smooth. Bring to a gentle simmer, whisking frequently, until the sauce thickens. Stir in the nutmeg and season with salt and pepper to taste.
Look for The sauce should be smooth, thick enough to coat the back of a spoon, and free of lumps.
Tip Whisk constantly to prevent lumps. If the sauce is too thick, add a splash more milk.
  3. Pour Sauce and Add Topping
Pour the béchamel sauce evenly over the chicken layer, spreading it to the edges. Sprinkle the shredded kaşar cheese over the top. Arrange the julienned red and green pepper strips in a decorative pattern on top of the cheese.
Look for The sauce should blanket the chicken completely, and the cheese and peppers should cover the top evenly.
Tip For a more even bake, make sure the sauce reaches the edges of the dish so the corners don't dry out.

Now you'll have a beautiful assembly: the chicken mixture spread over the potatoes, a smooth and creamy béchamel sauce poured over the top, and a generous layer of shredded kaşar cheese sprinkled over the sauce.

The pepper strips are arranged on top for a colorful finish. The béchamel should be thick enough to hold its shape, and the cheese should be evenly distributed so it melts into a golden crust.

Phase 3: Baking to Golden Perfection

  1. Bake the Casserole
Preheat the oven to 375°F (190°C). Bake the casserole for 25 minutes, or until the sauce is bubbly and the top is golden brown. Let stand for 5 minutes before serving.
Look for The top should be golden and the edges bubbling. A knife inserted into the center should come out hot.
Tip Letting the casserole rest allows the layers to set slightly, making it easier to slice clean squares.

After baking, the casserole will be bubbling at the edges, and the top will be a beautiful golden brown. The cheese will be melted and gooey, and the sauce will be set. Letting it rest for a few minutes will allow the layers to firm up slightly, making it easier to cut into neat squares. The aroma will be rich, creamy, and deeply savory.

Common mistakes

One common mistake is not seasoning the mashed potatoes enough, which can make the casserole taste flat. Be sure to taste and adjust the salt and pepper in the mash. Another pitfall is making the béchamel sauce too thin; if it's not cooked long enough, the casserole can be soupy.

Whisk constantly and cook until the sauce coats the back of a spoon. Also, be careful not to overcook the chicken in the skillet, as it will continue to cook in the oven, and dry chicken is a letdown.

How to tell it’s done

The casserole is done when the top is golden brown and the edges are bubbly. To check for doneness, insert a knife into the center; it should come out hot to the touch.

The internal temperature of the chicken should have reached 165°F (74°C) during the cooking step, but since it's already cooked before baking, the casserole is mainly about heating through and browning the top. Letting it rest for a few minutes will help the layers set for cleaner slices.
