Before you start

Before beginning the cooking process, ensure all ingredients are measured and ready. Bring a large pot of salted water to a boil for the pasta. Soften the cream cheese by setting it on the counter for about thirty minutes before you start.

Clear your workspace to allow for the mixing of the pasta and sauce components. Having everything prepped ensures that the assembly remains efficient and that the cheese is added while the pasta and chicken are still hot enough to facilitate a smooth melt.

Ingredients at a glance (6)
  • 2 lb chicken breast, diced
  • 3 tbsp jerk seasoning
  • 1 lb penne pasta, cooked al dente
  • 2 cans diced tomatoes with green chilies
  • 8 oz cream cheese, softened
  • 2 cups shredded cheddar cheese

Instructions

Cooking the base

  1. Prepare the chicken and pasta
Preheat the oven to 375°F (190°C). Cook the penne pasta in a large pot of boiling water according to package instructions until al dente, then drain. Season the diced chicken breast thoroughly with the jerk seasoning. In a large skillet over medium-high heat, cook the chicken until it reaches an internal temperature of 165°F (74°C).
Look for Chicken is opaque and cooked through.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Ensure the chicken is cut into uniform pieces for even cooking.

At the end of this phase, the chicken should be fully cooked, opaque, and aromatic from the jerk seasoning. The pasta should be tender but still firm to the bite. Check that the chicken has reached 165°F (74°C) to ensure safety. The kitchen should smell strongly of the spices, indicating the seasoning has properly adhered to the meat and the flavors have begun to develop.

Mixing the casserole

  1. Combine ingredients
In a large mixing bowl, combine the cooked pasta, cooked chicken, diced tomatoes with green chilies, and softened cream cheese. Mix until the cream cheese is melted and coats the pasta and chicken evenly. Transfer the mixture into a 9x13 inch baking dish and spread it into an even layer.
Look for The mixture is creamy and well-combined.
Tip Soften the cream cheese to room temperature for easier mixing.

Once mixed, the pasta and chicken should be completely coated in a thick, creamy, and vibrant sauce. The mixture should appear uniform, with the tomatoes and green chilies distributed evenly throughout.

Ensure there are no large clumps of cream cheese remaining in the bowl before transferring the mixture into your baking dish. The texture should be thick and clinging rather than runny or overly loose.

Final bake

  1. Bake and serve
Sprinkle the shredded cheddar cheese over the top of the pasta mixture. Place the dish in the preheated oven and bake for 15 to 20 minutes, or until the cheese is bubbling and golden. Remove from the oven and let it rest for 5 minutes before serving to allow the sauce to set slightly.
Look for Cheese is melted and bubbly.
Tip Watch the cheese closely to prevent burning.

The final bake is complete when the cheddar cheese is melted and bubbling across the entire surface of the dish. The edges should show signs of browning, and the internal heat should be consistent throughout the baking dish. Let the dish rest for five minutes; this allows the sauce to thicken slightly and makes serving much easier, resulting in those perfect cheese pulls that define this comfort dish.

Common mistakes

A common mistake is failing to cook the pasta until it is truly al dente; since it will spend additional time in the oven, soft pasta will lose its texture entirely. Another error is neglecting to mix the cream cheese thoroughly; lumps of cream cheese will result in an uneven sauce.

Finally, avoid using cold cream cheese, as it will not incorporate properly, leaving the pasta dry in some areas and overly thick in others instead of creating a uniform, velvety coating.

How to tell it’s done

The dish is considered done when the cheese topping is fully melted, bubbling, and beginning to brown slightly at the edges. The internal temperature of the chicken must reach at least 165°F (74°C).

Because the pasta is already cooked before it enters the oven, the baking time is primarily focused on heating the ingredients through and melting the cheese, so avoid overcooking, which could cause the pasta to become too soft or mushy.

  • Poultry: 165°F (74°C) in the thickest part
