Before you start

Before you begin, ensure that your oven is fully preheated to 400°F (200°C) to ensure the potato tots get crispy rather than soggy. Take your cream cheese out of the refrigerator about thirty minutes before you plan to start so that it softens sufficiently.

Prepare your workspace by laying out your baking dish and having your knife and cutting board ready for dicing the jalapenos and slicing the sausage. Having all your ingredients measured and ready to go makes the assembly process seamless.

Ingredients at a glance (5)
  • 32 oz frozen potato tots
  • 1 lb smoked sausage, sliced into coins
  • 16 oz cream cheese, softened
  • 3 large fresh jalapenos, diced
  • 2 cups shredded cheddar cheese

Instructions

Base assembly

  1. Prepare the base
Preheat your oven to 400°F (200°C). Arrange the frozen potato tots in an even layer in a large 9x13 inch baking dish. Scatter the sliced smoked sausage coins evenly over and between the potato tots to ensure every serving has a good mix of ingredients.
Look for The tots and sausage are evenly distributed across the bottom of the baking dish.
Tip Ensure the tots are not stacked too high so they crisp up evenly during the baking process.

The potato tots and sausage coins should form a uniform layer across the bottom of the dish. There should be enough space between the tots for the sauce to settle in later, but they should be packed closely enough to support the weight of the cheese topping.

Check that the sausage pieces are sliced to a consistent thickness so they cook evenly throughout the baking time.

Sauce application

  1. Mix and pour sauce
In a medium mixing bowl, combine the softened cream cheese with the diced jalapenos. Stir until the jalapenos are thoroughly incorporated into the cheese. Spoon dollops of this mixture evenly over the potato tots and sausage. Use a spatula to gently spread the sauce so it covers the top surface of the casserole.
Look for The cream cheese mixture is spread in a relatively even layer over the tots and sausage.
Tip If the cream cheese is too firm, microwave it for 15 seconds to make it easier to spread.

The cream cheese and jalapeno mixture should be smooth and spreadable. As you dollop it over the tots, aim for even coverage across the entire dish. It does not need to be a perfectly flat layer, as it will melt and flow into the crevices during the baking process. Ensure the jalapenos are diced finely enough to distribute their heat evenly throughout the creamy sauce.

Final bake

  1. Top and bake
Shower the shredded cheddar cheese over the entire surface of the casserole. Place the dish in the center of the preheated oven and bake for 35 minutes, or until the cheese is melted, bubbling, and golden brown on top. Once cooked, ensure the internal temperature of the sausage reaches 160°F (71°C). Remove from the oven and let it rest for 5 minutes before serving.
Look for The cheese is bubbling, melted, and golden brown on top.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Watch the edges of the casserole to ensure the cheese does not burn before the middle is fully heated.

The casserole is finished when the cheddar cheese has melted completely and turned a vibrant golden brown. The edges should be bubbling vigorously. If the top browns too quickly before the center is hot, you can tent a piece of aluminum foil over the dish for the final 5 to 10 minutes of baking to protect the cheese while the interior continues to heat through.

Common mistakes

A common mistake is overcrowding the baking dish, which prevents the potato tots from becoming crispy. Ensure they are in a single, even layer for the best results. Another error is using cold cream cheese, which is difficult to stir and spread evenly over the potatoes.

Always soften the cheese first. Additionally, do not skip the resting period at the end; serving it immediately out of the oven can make the sauce appear too thin and difficult to portion into clean squares.

How to tell it’s done

The casserole is done when the potato tots are golden and crispy, and the cheese topping is bubbling and shows deep golden-brown spots. The internal temperature of the sausage must reach a minimum of 160°F (71°C) to ensure it is cooked through.

The cream cheese sauce should be hot and liquid enough to coat the tots easily when served. Let the dish stand for 5 minutes after removing it from the oven to allow the sauce to set slightly, which makes serving much easier.

  • Ground meat: 160°F (71°C) in the thickest part
