Before you start

Before starting the cooking process, organize all ingredients and tools to ensure a smooth workflow. Peel and chop the carrots into uniform pieces so they roast evenly. Peel and cube the potatoes, placing them in a pot of cold water.

Mince the garlic and chop the fresh herbs. Pat the chicken cutlets dry with paper towels. Having these components ready prevents overcooking and allows for seamless transitions.

Ingredients at a glance (7)
  • 4 chicken cutlets
  • 2 lb Yukon Gold potatoes, peeled and cubed
  • 1/2 cup unsalted butter
  • 1 lb carrots, peeled and sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tbsp fresh herbs, chopped

Instructions

Sides Preparation

  1. Roast the Carrots
Preheat the oven to 400°F (204°C). Place the carrots on a baking sheet. Spread them in a single layer and roast for 20 to 25 minutes until tender and caramelized.
Look for Carrots are tender with caramelized edges.
Tip Spread the carrots out completely so they roast instead of steam.
  2. Prepare the Mashed Potatoes
Place the cubed potatoes in a large pot and cover with cold water. Bring to a boil and cook for 15 minutes until fork-tender. Drain the potatoes, return them to the pot, and mash with the butter until fluffy.
Look for Potatoes are fork-tender and mash easily.
Tip Mash the potatoes while they are hot to ensure a smooth, creamy texture.

At the end of this phase, the carrots should be tender with caramelized, slightly browned edges, releasing a sweet, roasted aroma. The potatoes should be completely tender when pierced with a fork, draining easily without resistance.

Once mashed with butter, they should appear light, fluffy, and steaming hot, ready to be plated alongside the main components of the meal.

Chicken Searing

  1. Sear the Chicken
Heat a large skillet over medium-high heat. Add the chicken cutlets to the skillet and sear for 5 to 6 minutes per side until golden-brown and the internal temperature reaches 165°F (74°C). Remove the chicken from the skillet and set aside.
Look for Chicken is deeply browned and reaches safe temperature.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Do not crowd the skillet; sear in batches if necessary to get a good crust.

The chicken cutlets should display a deep golden-brown crust on both sides, sizzling gently as they are removed from the pan. The kitchen will be filled with a savory, roasted poultry aroma. A fond, or layer of caramelized browned bits, should be visible on the bottom of the skillet, ready to flavor the upcoming cream sauce.

Sauce and Assembly

  1. Simmer the Herb Cream Sauce
Reduce the heat to medium. Add the minced garlic to the same skillet and sauté for 1 minute until fragrant. Pour in the heavy cream and chopped fresh herbs, scraping up the browned bits from the bottom of the pan. Simmer for 3 to 4 minutes until the sauce thickens slightly.
Look for Sauce bubbles gently and thickens enough to coat a spoon.
Tip Scraping the pan drippings adds immense depth of flavor to the cream.
  2. Assemble and Serve
Plate a portion of mashed potatoes and roasted carrots. Place a seared chicken cutlet alongside them, and pour the warm garlic-herb cream sauce generously over the chicken. Serve immediately while hot.
Look for Sauce cascades beautifully over the hot chicken and potatoes.
Tip Garnish with extra fresh herbs just before serving for a pop of color.

The herb cream sauce should be bubbling gently, turning a light golden color as it incorporates the pan drippings and garlic. It should be thick enough to coat the back of a spoon. When poured over the warm chicken, potatoes, and carrots, the entire plate should look incredibly rich, glossy, and inviting.

Common mistakes

A common mistake is crowding the skillet when searing the chicken cutlets. If the pieces are too close together, they will steam instead of sear, preventing the formation of that desirable golden crust. Cook the chicken in batches if necessary.

Another pitfall is overworking the mashed potatoes, which releases excess starch and turns them gummy; mash them just until smooth and combined. Finally, avoid burning the garlic when sautéing, as burnt garlic imparts a bitter flavor to the cream sauce.

How to tell it’s done

The roasted carrots are done when they are tender and easily pierced with a sharp knife. The potatoes are ready for mashing when they fall apart slightly when pressed.

For the chicken, safety and quality are paramount; the poultry must reach an internal temperature of 165°F (74°C) at its thickest part to ensure it is cooked through. The cream sauce is finished when it reduces slightly and achieves a velvety, coat-the-spoon consistency.

  • Poultry: 165°F (74°C) in the thickest part
