Before you start

Before beginning the assembly, ensure the oven is fully preheated to the required temperature. Prepare the workspace by gathering all ingredients and measuring them out in advance. Boil the lasagna noodles until they are just tender, drain them thoroughly, and lay them out on a clean kitchen towel to prevent sticking.

Having the sauce, cubed ham, and shredded cheeses ready within reach will make the layering process smooth and efficient, allowing the lasagna to be assembled quickly before it heads into the oven.

Ingredients at a glance (5)
  • 1 lb lasagna noodles, boiled until al dente
  • 1 1/2 cups cubed ham
  • 3 cups creamy white sauce, store-bought or made ahead
  • 3 cups shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese

Instructions

Pasta Preparation

  1. Prepare the pasta and oven
Preheat the oven to 375°F (190°C). Bring a large pot of salted water to a boil and cook the lasagna noodles according to package directions until al dente. Drain the noodles and set them aside to cool slightly before assembly to ensure they are easy to handle.
Look for noodles are tender but still have a slight bite
Tip Adding a drizzle of olive oil to the water helps prevent the noodles from sticking together after they are drained.

The noodles should be cooked to a perfect al dente state, meaning they are tender but still retain a slight firmness. They should be drained well and spread out so they do not clump together. Check that the oven is preheated to 375°F (190°C) and that all ingredients are organized and ready for the assembly phase to ensure a seamless workflow.

Layering the Lasagna

  1. Assemble the lasagna layers
Spread a thin layer of the creamy white sauce on the bottom of a 9x13 baking dish. Place a layer of cooked noodles over the sauce. Top the noodles with a portion of the cubed ham, a generous sprinkle of mozzarella cheese, and more white sauce. Repeat these layers until all ingredients are used, finishing with a final layer of sauce and a thick coating of both mozzarella and parmesan cheese on top.
Look for ingredients are neatly distributed in even, distinct layers
Tip Spread the sauce all the way to the edges of the dish to keep the pasta noodles from drying out during the baking process.

The assembly is complete when you have evenly distributed the white sauce, ham, and cheese across the noodle layers. The dish should look uniform, with the final layer of cheese covering the top completely.

Check that the sauce has been spread to the edges of the dish to prevent the noodles from drying out and that the layers are stacked evenly.

Baking and Resting

  1. Bake and serve
Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown. Let the lasagna rest for 10 minutes before slicing to allow the layers to set properly, ensuring each slice holds its shape when served.
Look for cheese is golden brown and bubbling around the edges
Tip If the top browns too quickly, tent the foil loosely over the dish to prevent the cheese from burning.

The lasagna is finished when the cheese is golden and bubbling. After removing it from the oven, the most important step is the resting period. The lasagna should look set and firm. Check that the internal temperature is hot throughout and that the edges show signs of a gentle, consistent bubbling before you attempt to slice it for serving.

Common mistakes

A common mistake is failing to drain the noodles properly, which introduces too much water into the lasagna and makes the final dish watery. Another error is neglecting to let the lasagna rest after baking; skipping this step makes it nearly impossible to serve clean slices, as the layers will slide apart immediately.

Finally, do not overstuff the baking dish, as this can cause the sauce to boil over in the oven, creating a mess that is difficult to clean up later.

How to tell it’s done

The lasagna is considered done when the internal temperature is thoroughly heated through and the top layer of cheese is melted, bubbling, and golden brown. Visually, the sauce should be slightly visible around the edges of the dish, indicating it is hot and bubbling.

Using an instant-read thermometer, the center should reach at least 165°F (74°C) to ensure it is hot enough to serve. Always allow the dish to rest for 10 minutes to ensure it holds its shape.
