Tips for success
For the best flavor, use full-fat heavy cream — it won't curdle during the long cook time. If you prefer a lighter sauce, you can substitute half-and-half, but the sauce may be thinner.
Also, consider browning the pork chops in a skillet before adding them to the slow cooker for extra depth, though this step is optional and adds a few minutes of effort.
To thicken the sauce at the end, whisk together 1 tablespoon of cornstarch with 2 tablespoons of water and stir it into the slow cooker during the last 30 minutes of cooking.
Let it cook uncovered to allow the sauce to reduce. This is especially helpful if the sauce seems too thin for your taste.
Variations
- Chicken Thighs: Swap the pork chops for 6 bone-in, skinless chicken thighs. Cook on LOW for 4 to 5 hours, or until the chicken reaches 165°F (74°C). The sauce will be just as creamy and delicious.
- Add Mushrooms: For extra earthy flavor, add 8 oz of sliced cremini mushrooms on top of the pork chops before adding the soup. They'll cook down into the sauce, adding texture and depth.
- Cheddar and Bacon: Replace the Gruyère with sharp cheddar and sprinkle 4 slices of cooked, crumbled bacon over the top before serving. This adds a smoky, salty twist that pairs beautifully with the ranch.
- Spicy Kick: Stir 1/2 teaspoon of cayenne pepper or a few dashes of hot sauce into the cream before pouring it over the chops. The heat cuts through the richness for a bold, spicy version.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days.
- Freezer
- Freeze in a freezer-safe container for up to 2 months. Thaw overnight in the fridge before reheating gently on the stovetop.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until heated through. Add a splash of cream or broth if the sauce has thickened too much.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The sauce will thicken as it cools; reheat gently on the stovetop or in the microwave, adding a splash of cream or broth to loosen it if needed.
You can assemble the entire dish in the slow cooker insert the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook as directed, adding 30 minutes to the cooking time to account for the cold start. Or, cook the full recipe, cool, and refrigerate in a container for up to 2 days before reheating.
Serving ideas
Serve the pork chops over creamy mashed potatoes, egg noodles, or buttered rice to soak up the luscious sauce. A side of roasted green beans or a crisp green salad adds brightness and balances the richness. For a low-carb option, serve with steamed broccoli or cauliflower mash.
Garnish with a sprinkle of fresh chopped parsley or chives if you like, though the dish is delicious as is.
Pair with a glass of Chardonnay or a light Pinot Noir to complement the creamy, nutty flavors. This is a hearty, satisfying meal that feels special but is simple enough for a weeknight.

Creamy Gruyère Ranch Mushroom Pork Chops

Ingredients
- 4 bone-in ribeye pork chops, about 1 inch thick
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1 oz dry buttermilk ranch seasoning mix
- 1/2 cup heavy whipping cream
- 1 1/2 cups shredded Gruyère cheese
Instructions
- Place the bone-in ribeye pork chops in the bottom of a 6-quart slow cooker in a single layer, slightly overlapping if needed. They will shrink as they cook, so a snug fit is fine.
- Spoon the condensed cream of mushroom soup over the pork chops, spreading it to cover as much surface as possible. Sprinkle the dry buttermilk ranch seasoning evenly over the top.
- Pour the heavy whipping cream over the soup and seasoning. Sprinkle the shredded Gruyère cheese evenly across the top, covering the surface as much as possible.
- Cover the slow cooker and cook on LOW for 6 to 7 hours, or on HIGH for 3 to 4 hours, until the pork chops are tender and the sauce is bubbling around the edges. Do not lift the lid during the first 4 hours on LOW or 2 hours on HIGH. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the pork chops rest in the sauce, uncovered, for at least 5 minutes. This allows the juices to redistribute and the sauce to thicken slightly.
- Using a serving spoon, lift each pork chop onto a plate, spooning the creamy mushroom-ranch sauce generously over the top. Serve hot, over mashed potatoes if desired.
