Tips for success
For the most flavorful sauce, use a good-quality Gruyère and shred it fresh. The cheese melts more smoothly and has a better taste.
If you prefer a stronger garlic flavor, slice the garlic instead of smashing it, but be aware that the flavor will be more pronounced. Fresh rosemary is essential; dried rosemary can be woody and less aromatic.
This recipe is forgiving—you can add a splash of chicken broth if the sauce seems too thick, or let it reduce if too thin.
If you want a thicker sauce, whisk in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water) during the last 15 minutes of cooking. For a touch of brightness, a squeeze of lemon juice just before serving can cut through the richness.
Variations
- Add Mushrooms: Sauté 8 oz sliced cremini mushrooms in butter until golden, then add them with the potatoes. They will soak up the creamy sauce and add an earthy depth.
- Use Thighs: Swap the chicken cutlets for boneless, skinless thighs. They stay even more moist and are forgiving if cooked a little longer. Reduce cooking time to 3.5 hours if the thighs are small.
- Make It Spicy: Add 1/2 teaspoon red pepper flakes or a minced jalapeño with the garlic for a gentle heat. The spice will infuse the cream sauce without overpowering the Gruyère.
- Vegetarian Version: Replace the chicken with 4 cups of cauliflower florets and 2 cups of vegetable broth. Cook on LOW for 3 hours, then add the cream and cheese and cook for 30 more minutes.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days. Reheat gently, adding a splash of cream or broth to restore the sauce's consistency.
- Freezer
- Freeze in an airtight container for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over low heat, stirring occasionally, until warmed through. Add a splash of cream or chicken broth if the sauce is too thick.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The sauce will thicken as it cools; reheat gently on the stovetop or in the microwave, adding a splash of cream or broth to loosen it if needed. The flavors continue to meld, making it even more delicious the next day.
This dish can be assembled up to 24 hours in advance. Layer the ingredients in the slow cooker insert, cover, and refrigerate. When ready to cook, place the insert in the slow cooker and cook on LOW for 4 hours. You may need to add 15-30 minutes of cooking time because the ingredients start cold.
Serving ideas
Serve the chicken and potatoes directly from the slow cooker, spooning the creamy sauce over the top. A side of crusty bread or a simple green salad balances the richness.
For an extra-indulgent meal, spoon the chicken and sauce over creamy mashed potatoes, as shown in the video. The sauce soaks into the potatoes for a truly comforting bite.
This dish pairs well with steamed green beans, roasted asparagus, or a crisp green salad with a tangy vinaigrette.
The creamy, cheesy sauce calls for something bright and acidic to cut through the richness. A glass of dry white wine, like Sauvignon Blanc or Chardonnay, also complements the flavors beautifully.
