Before you start

Before starting, make sure the chicken thighs are thawed if they were frozen. Pat them dry with paper towels, though there is no need to season them — the korma sauce provides plenty of flavor. Dice the sweet onions into small, even pieces.

Measure the ghee and heavy cream so they are ready to go. Set out a 7-quart slow cooker and have the lid nearby. If serving with rice, start the rice about 30 minutes before the curry finishes, and warm the naan just before serving.

Ingredients at a glance (7)
  • 6 boneless skinless chicken thighs
  • 2 cups turmeric-cardamom korma sauce
  • 1 cup diced sweet onions
  • 3 tbsp golden ghee
  • 1/2 cup heavy whipping cream
  • fluffy steamed basmati rice, for serving
  • warm garlic naan, for serving

Instructions

Layer and Load

  1. Layer the chicken and sauce
Place the six boneless skinless chicken thighs in a single layer in the bottom of a 7-quart slow cooker. Pour the turmeric-cardamom korma sauce over the chicken, then scatter the diced sweet onions evenly across the top.
Look for The chicken is mostly covered by sauce and onions, with some edges visible.
Tip No need to stir — the slow cooker will blend the flavors as it cooks.
  2. Add the fat and cream
Spoon the golden ghee over the sauce in small dollops, then pour the heavy whipping cream in a slow swirl across the top. Do not mix; the cream will create a rich layer as it melts.
Look for The cream forms a white swirl over the orange-gold sauce.
Tip Let the cream sit on top — it will emulsify during cooking.

At the end of this phase, the chicken thighs are nestled in a single layer at the bottom of the slow cooker, mostly covered by the turmeric-cardamom korma sauce. The diced sweet onions are scattered evenly, and dollops of golden ghee sit on top.

The heavy cream swirls across the surface, creating a marbled pattern. The ingredients look raw but aromatic, with the turmeric and cardamom already releasing their scent. Check that the chicken is not piled too high — it should be in one layer for even cooking.

Low and Slow

  1. Cover and cook low and slow
Place the lid on the slow cooker and set it to low. Cook for 4 hours, or until the chicken thighs are tender and easily shred with a fork. The sauce will bubble gently around the edges.
Look for The sauce is bubbling softly and the chicken is opaque and tender.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Resist lifting the lid — each peek adds 20 minutes of cooking time.
  2. Check the chicken temperature
After 4 hours, insert an instant-read thermometer into the thickest part of a chicken thigh. It should read at least 165°F (74°C). If not, cover and cook for another 30 minutes, then check again.
Look for The thermometer reads 165°F (74°C) and the chicken is fork-tender.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Shredding with two forks is a good sign it's done.

After several hours on low, the sauce is bubbling gently around the edges, and the chicken is opaque and tender. The ghee and cream have melted into the sauce, giving it a golden, glossy appearance. The kitchen smells warmly of turmeric, cardamom, and onions. The chicken should be fork-tender and easily pierced. Use an instant-read thermometer to confirm it has reached 165°F (74°C). If it has not, continue cooking and check again in 30 minutes.

Finish and Serve

  1. Stir the sauce gently
Once the chicken is fully cooked, stir the sauce gently to combine the ghee and cream into the korma. The gravy should be glossy and golden. Leave the chicken in large pieces or shred it slightly.
Look for The sauce is smooth, glossy, and coats the back of a spoon.
Tip Stirring too hard can break the chicken — use a light hand.
  2. Serve over rice with naan
Spoon the creamy korma chicken over warm steamed basmati rice on a plate, and serve with warm garlic naan on the side. Ladle extra sauce over the top for a rich finish.
Look for The curry is steaming and the rice is fluffy.
Tip Warm the naan in a dry skillet for 30 seconds per side.

After stirring gently, the sauce is smooth, glossy, and coats the back of a spoon. The chicken is tender but still holds its shape in large pieces. The curry is steaming and fragrant, with a rich golden color. The rice is fluffy and the naan is warm.

When ladled over the rice, the sauce pools around the grains and the chicken glistens. Everything looks and smells like a comforting, luxurious dinner. Taste a bit of sauce to ensure the seasoning is balanced.

Common mistakes

One common mistake is lifting the lid too often. Every time the lid is opened, heat escapes and adds to the cooking time. Another mistake is using chicken breasts, which dry out quickly in a slow cooker. Stick with thighs for the best texture.

Adding too much cream can make the sauce greasy, so measure carefully. Also, avoid stirring the chicken too aggressively at the end — it can break apart into shreds, which is fine for some dishes but not ideal if you want larger pieces.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) in the thickest part of the thigh. It should be fork-tender and easily pull apart with a gentle tug. The sauce should be bubbling gently around the edges and look glossy and slightly thickened. If the sauce seems too thin, remove the lid and cook on high for an additional 20 minutes to reduce it. The onions should be completely soft and nearly melted into the gravy.

  • Poultry: 165°F (74°C) in the thickest part
