Tips for success
For the best texture, cook the pasta just shy of al dente because it will continue to cook slightly when tossed with the hot sauce. Use tongs to toss the pasta thoroughly, ensuring every strand is coated.
If the sauce thickens too much, add a splash of reserved pasta water to loosen it. Taste and adjust seasoning with salt and pepper before serving.
Let the chicken rest for at least 3 minutes after searing to allow the juices to redistribute. Slicing against the grain yields tender strips.
For extra flavor, deglaze the skillet with a splash of chicken broth or white wine before adding the cream — this lifts the browned bits and adds depth. However, the recipe is delicious as written.
Variations
- Add Mushrooms: Sauté sliced mushrooms in the skillet after removing the chicken. Cook until golden, then proceed with the sauce. Earthy mushrooms complement the creamy parmesan beautifully.
- Spicy Kick: Add 1/4 teaspoon of red pepper flakes with the garlic for a subtle heat. Or finish with a drizzle of hot sauce for brightness.
- Lemon Garlic: Add the zest of one lemon and a squeeze of lemon juice to the sauce before tossing the pasta. The citrus cuts through the richness and adds freshness.
- Vegetarian Version: Skip the chicken and add sautéed spinach or roasted cherry tomatoes. Use vegetable broth to deglaze the pan and increase the parmesan slightly for extra flavor.
Storage and make-ahead

Store leftovers in an airtight container in the refrigerator for up to 3 days. The sauce may thicken when chilled; add a splash of milk or water when reheating to restore a creamy consistency.
The chicken can be pounded and seasoned up to 24 hours in advance, stored covered in the refrigerator.
The sauce can be made ahead and refrigerated for up to 2 days; reheat gently and thin with milk or pasta water. Cook the pasta fresh for best texture.
Serving ideas
Serve this pasta immediately after finishing for the creamiest texture. Divide among warm bowls and top with extra parmesan and a crack of black pepper.
A side of crusty bread or a simple green salad complements the richness beautifully.
For a family-style presentation, bring the skillet to the table with the chicken arranged on top. Garnish with parsley and let everyone serve themselves. This dish pairs well with a crisp white wine or sparkling water with lemon.

Creamy Garlic Parmesan Chicken Fettuccine in 15 Minutes

Ingredients
- 1 lb boneless, skinless chicken breast
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper, plus more for serving
- 2 tbsp olive oil
- 12 oz fettuccine pasta
- 1 1/2 cups heavy cream
- 3/4 cup grated parmesan cheese
- 3 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
Instructions
- Place the chicken breasts between two sheets of plastic wrap or parchment paper. Pound with a meat mallet or rolling pin to an even 1/2-inch thickness. In a small bowl, stir together the smoked paprika, garlic powder, salt, and black pepper. Rub the seasoning mixture over both sides of the chicken.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 3 to 4 minutes per side. Transfer the chicken to a cutting board and let it rest while preparing the sauce. The internal temperature should reach 165°F (74°C).
- Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta.
- In the same skillet used for the chicken, reduce the heat to medium. Add the minced garlic and cook, stirring, for about 30 seconds until fragrant. Pour in the heavy cream and bring to a gentle simmer. Whisk in the grated parmesan cheese until smooth and melted. Season with a pinch of salt and pepper.
- Add the drained fettuccine directly to the skillet with the sauce. Toss with tongs until the pasta is fully coated and the sauce clings to every strand. If the sauce seems too thick, add a splash of reserved pasta water to reach the desired consistency.
- Slice the rested chicken into strips. Place the sliced chicken on top of the pasta in the skillet or divide among serving plates.
- Sprinkle the chopped parsley and a generous crack of black pepper over the top. Serve immediately while hot.
