Tips for success
To elevate the flavor profile of this dish, consider deglazing the skillet with a splash of chicken broth or dry white wine right after sautéing the garlic. This helps lift all the caramelized, savory bits stuck to the bottom of the pan, incorporating them directly into the cream sauce for an extra layer of complexity.
Additionally, using a blend of high-quality cheeses, such as mixing a bit of asiago or fontina with the mozzarella, can add a wonderful depth of flavor to the bubbly crust.
If you find that your cheese crust is fully melted but has not browned to your liking by the time the chicken is cooked through, you can turn on your oven's broiler for the last 2 to 3 minutes of baking.
Keep a very close eye on the dish during this time, as the broiler can quickly turn a perfect golden crust into a burnt mess. Always let the chicken rest for a few minutes after baking to ensure the juices lock in.
Variations
- Spinach and Mushroom Cream: Sauté sliced mushrooms and fresh baby spinach with the garlic before adding the cream to create a rich, vegetable-packed sauce.
- Sun-Dried Tomato Garlic Chicken: Stir chopped sun-dried tomatoes into the cream sauce for a sweet, tangy contrast that pairs beautifully with the rich Parmesan cheese.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days.
- Freezer
- Freezing is not recommended as the heavy cream sauce may separate and curdle upon thawing.
- Reheat
- Reheat gently in a covered skillet over medium-low heat with a splash of cream or milk until warmed through.
Store any leftover chicken and cream sauce in an airtight container in the refrigerator within two hours of cooking. Kept properly, the leftovers will remain fresh and delicious for up to three to four days. When storing, make sure to pour all the remaining garlic cream sauce over the chicken breasts to keep them moist and prevent them from drying out during storage and subsequent reheating.
You can prepare this dish ahead of time by searing the chicken and making the garlic cream sauce up to a day in advance. Assemble the seared chicken and sauce in the baking dish, cover it tightly with plastic wrap, and store it in the refrigerator.
When you are ready to serve, remove the dish from the fridge, top with the cheeses, and bake as directed, adding a few extra minutes to the baking time to ensure it heats through.
Serving ideas
This rich and creamy chicken pairs beautifully with a variety of simple side dishes that can soak up the delicious garlic Parmesan sauce. Serve it over a bed of warm fettuccine, angel hair pasta, or creamy mashed potatoes for a comforting and hearty meal.
For a lighter option, consider serving the chicken alongside a crisp green salad tossed in a light vinaigrette, or with roasted vegetables like asparagus, broccoli, or zucchini.
To present the dish beautifully, slice the chicken breasts crosswise on a cutting board before plating, showing off the juicy interior, and fan the slices out on the plate. Spoon a generous amount of the warm garlic cream sauce directly over the sliced chicken, and top with a portion of the bubbly cheese crust. A final sprinkle of fresh parsley and red pepper flakes adds a vibrant pop of color.

Creamy Garlic Parmesan Chicken with a Bubbly Cheese Crust

Ingredients
- 1 1/2 lb boneless skinless chicken breasts
- 1 tsp salt
- 1/2 tsp black pepper
- 4 cloves minced garlic
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1 tbsp chopped fresh herbs
- 1/4 tsp dried red pepper flakes
Instructions
- Season both sides of the chicken breasts evenly with the salt and black pepper. Heat a large skillet over medium-high heat until hot.
- Place the seasoned chicken breasts in the hot skillet. Sear for about 3 to 4 minutes on each side, or until they develop a beautiful golden-brown crust. Transfer the seared chicken breasts to a baking dish.
- Reduce the skillet heat to medium. Add the minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and bring to a gentle simmer, scraping up any browned bits from the bottom of the pan. Stir in the grated Parmesan cheese until melted and smooth.
- Pour the warm garlic cream sauce evenly over the seared chicken breasts in the baking dish. Top each chicken breast generously with the shredded mozzarella cheese.
- Bake in a preheated oven at 375°F (190°C) for 15 to 20 minutes, or until the chicken reaches a safe internal temperature of 165°F (74°C). The cheese on top should be melted, bubbly, and lightly browned.
- Remove the baking dish from the oven. Garnish the bubbly cheese crust immediately with the chopped fresh herbs and dried red pepper flakes. Let the dish rest for 5 minutes before serving.
