Tips for success
For a more vibrant flavor, add a handful of fresh chopped parsley or basil right before serving. This adds a pop of color and a fresh, herbaceous note that complements the garlic in the cheese sauce.
Adjust the amount of herbs based on personal preference, starting with a tablespoon and adding more if desired.
If you find the sauce is slightly too thin after stirring in the pasta, let it sit for a few extra minutes uncovered. The starch from the pasta will naturally help thicken the sauce.
Conversely, if it is too thick, simply stir in a small amount of warm chicken broth or reserved pasta water until the desired consistency is reached.
Variations
- Spicy Garlic Herb Chicken: Add a teaspoon of red pepper flakes during the cooking process for a gentle heat that cuts through the creamy cheese sauce perfectly.
- Spinach and Garlic Chicken: Stir in two cups of fresh baby spinach during the final minutes of cooking until just wilted for added texture and color.
Storage and make-ahead
- Fridge
- Store in an airtight container for up to 3 days.
- Freezer
- Freezing is not recommended as the creamy sauce may separate upon thawing.
- Reheat
- Reheat in a saucepan over low heat, adding a splash of broth if necessary.
Store any leftovers in an airtight container in the refrigerator for up to 3 days. Ensure the food cools to room temperature within two hours of cooking before placing it in the fridge.
When reheating, add a small splash of water or broth to prevent the sauce from drying out, as the pasta will continue to absorb liquid while refrigerated.
While this dish is best served fresh, you can prepare the chicken and sauce in the slow cooker ahead of time. Simply store the shredded chicken mixture separate from the cooked pasta.
When ready to eat, reheat the chicken sauce on the stovetop or in the microwave, boil the fresh pasta, and toss everything together just before serving to maintain the best texture.
Serving ideas
Serve this creamy chicken pasta in shallow bowls to showcase the sauce. It pairs beautifully with a side of steamed green beans or a crisp garden salad to balance the richness of the creamy cheese sauce. Warm, crusty bread is also an excellent option for cleaning up any remaining sauce on the plate.
For an elegant presentation, garnish each serving with a sprinkle of freshly grated parmesan cheese or a dash of red pepper flakes for a subtle hint of heat. Ensure the pasta is served immediately while hot, as the sauce is at its creamiest when freshly combined and warm from the slow cooker.

Creamy Garlic Herb Slow Cooker Chicken with Pasta

Ingredients
- 1 1/2 lb boneless skinless chicken breasts
- 1 pint cherry tomatoes, whole
- 1 wheel garlic herb cheese
- 1 cup chicken broth
- 8 oz rotini pasta, cooked
Instructions
- Place the raw chicken breasts into the bottom of the slow cooker basin. Scatter the whole cherry tomatoes around the chicken pieces. Position the round wheel of garlic herb cheese directly in the center of the slow cooker. Carefully pour the chicken broth around the edges of the cheese to ensure the bottom of the cooker is adequately covered for even heating.
- Cover the slow cooker and cook on high for 3 to 4 hours, or until the chicken reaches an internal temperature of 165°F (74°C). Once cooked, use two forks to shred the chicken breasts directly inside the slow cooker. Stir the shredded chicken with the melted herb cheese and softened tomatoes to create a creamy, cohesive sauce that coats all the meat.
- While the chicken is finishing, boil the rotini pasta in a separate large pot of salted water until al dente. Drain the pasta thoroughly. Add the cooked pasta into the slow cooker and toss well with the creamy chicken and herb sauce. Allow the mixture to rest for 5 minutes before serving warm on plates.
