Tips for success
For the best flavor, use freshly grated parmesan and good-quality unsalted butter. The sauce is the star here, so quality ingredients matter.
When searing the chicken, do not move it too soon—let it develop a golden crust before flipping. This adds texture and flavor.
If the sauce becomes too thick after sitting, add a splash of warm pasta water or milk to loosen it.
Taste and adjust seasoning with salt and pepper before serving. Garnish with extra parsley or a few shavings of parmesan for a finished look.
Variations
- Add Mushrooms: Sauté sliced mushrooms in the skillet after removing the chicken, before adding the butter and garlic. Cook until golden and tender, then proceed with the recipe. Mushrooms add an earthy depth that pairs beautifully with the creamy sauce.
- Spicy Kick: Add 1/2 teaspoon of red pepper flakes along with the garlic, or stir in a pinch of cayenne with the parmesan. The heat balances the richness of the cream and adds a lively kick.
- Herb Variation: Replace the parsley with fresh basil or chives. Stir in the herbs just before serving to keep their bright color and fresh flavor. A squeeze of lemon juice at the end can also brighten the dish.
- Vegetable Addition: Add a cup of frozen peas or steamed broccoli florets when combining the chicken and pasta. The vegetables add color and a pop of sweetness, making the dish more substantial.

Serving ideas
Serve this creamy chicken and rotini hot, straight from the skillet for a casual family dinner.
Pair it with a simple green salad and crusty bread to soak up any extra sauce. The dish is hearty enough to be a complete meal on its own.
For a more elegant presentation, plate individual portions and garnish with fresh parsley and a sprinkle of parmesan. A light white wine, such as Pinot Grigio, would complement the creamy sauce nicely.

Creamy Garlic Butter Chicken and Rotini

Ingredients
- 12 oz rotini pasta
- 1 1/2 lb boneless skinless chicken breasts, cut into bite-size pieces
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 3 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 1/2 cups heavy cream
- 3/4 cup grated parmesan cheese
- 2 tbsp fresh parsley, chopped
Instructions
- Bring a large pot of salted water to a boil. Add the rotini and cook according to package directions until al dente. Reserve about 1/2 cup of pasta water, then drain the pasta and set aside.
- Pat the chicken pieces dry with paper towels. Season with the kosher salt and black pepper, tossing to coat evenly.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook without stirring for 3-4 minutes, until golden brown on the bottom. Flip and cook for another 3-4 minutes, until the chicken is cooked through and reaches 165°F (74°C). Transfer the chicken to a plate and set aside.
- Reduce the heat to medium. Add the butter to the same skillet. Once melted, add the garlic and cook for 30-60 seconds, stirring constantly, until fragrant but not browned.
- Pour in the heavy cream and bring to a gentle simmer. Cook for 2-3 minutes, stirring occasionally, until the sauce starts to thicken slightly. Reduce the heat to low and gradually whisk in the parmesan cheese until the sauce is smooth and creamy.
- Return the cooked chicken to the skillet, along with the drained rotini. Toss everything together in the sauce, adding a splash of the reserved pasta water if needed to loosen the sauce and help it coat the pasta evenly.
- Stir in the chopped parsley. Serve immediately, spooning extra sauce from the skillet over each portion.
