Tips for success
For the best flavor, use a good-quality Parmesan and grate it yourself. Pre-grated cheese often contains anti-caking agents that can affect melting. To make the dish even richer, stir in a splash of heavy cream or a pat of butter just before serving.
If you prefer a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the slow cooker during the last 30 minutes of cooking.
This recipe is versatile – try adding a pinch of smoked paprika or a few fresh thyme sprigs for extra depth. For a bit of heat, a dash of hot sauce or red pepper flakes works well.
If you have leftover turkey, this is a great way to use it up, but adjust the cooking time to just 2-3 hours on LOW to avoid overcooking. Always taste and adjust seasoning before serving, as the soup and cheeses can be salty.
Variations
- Chicken Version: Substitute boneless, skinless chicken breasts for the turkey. Cook time will be similar, but check for doneness at 165°F (74°C). The dish becomes a classic chicken and corn casserole.
- Add Veggies: Stir in 1 cup of frozen peas or diced carrots along with the corn for extra color and nutrition. Add them in the last hour of cooking to keep them vibrant.
- Spicy Kick: Add a diced jalapeño or a teaspoon of chili flakes with the other ingredients for a subtle heat that complements the creamy sauce.
- Herb Infusion: Add 2 sprigs of fresh thyme or a teaspoon of dried rosemary to the slow cooker at the start. Remove the herb stems before shredding for a subtle earthy flavor.

- Reheat
- Reheat on the stovetop over low heat, stirring frequently, or in the microwave in 30-second bursts.
Store leftover turkey and sauce in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or in the microwave, adding a splash of milk or broth to loosen the sauce if needed. The dish also freezes well for up to 3 months; thaw overnight in the refrigerator before reheating.
This dish can be assembled the night before: layer all ingredients in the slow cooker insert, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook as directed, adding about 30 minutes to the cooking time if starting from cold. You can also cook the full dish in advance, then refrigerate and reheat gently when ready to serve.
Serving ideas
Serve the creamy turkey and corn over warm buttered egg noodles for a classic pairing. The noodles soak up the rich sauce, making every bite satisfying. Add a side of crusty bread or a simple green salad to round out the meal. For a low-carb option, serve over steamed cauliflower rice or alongside roasted vegetables.
For a beautiful presentation, spoon the turkey mixture over the noodles and sprinkle with extra Parmesan and a little chopped fresh parsley if desired.
This dish is hearty enough to be a main course on its own, but it also works well as a filling for baked potatoes or as a topping for biscuits. Leftovers make a delicious filling for tacos or a topping for baked potatoes.

Creamy Crockpot Turkey and Corn

Ingredients
- 2 lb boneless turkey breast cutlets
- 2 cups frozen sweet corn kernels, thawed
- 1 can (10.5 oz) condensed cream of potato soup
- 8 oz softened cream cheese, cut into cubes
- 1 cup freshly grated Parmigiano-Reggiano cheese
- 12 oz buttered twisted egg noodles, cooked and warm
Instructions
- Place the turkey breast cutlets in the bottom of a 6-quart slow cooker. Scatter the sweet corn kernels evenly over the turkey. Pour the condensed cream of potato soup over the top, spreading it to cover the meat and corn as much as possible.
- Dot the softened cream cheese cubes over the top of the soup layer. Sprinkle the freshly grated Parmigiano-Reggiano cheese evenly over the cream cheese.
- Cover the slow cooker and cook on LOW for 5 to 6 hours, or on HIGH for 3 to 4 hours, until the turkey is tender and easily shreds. The sauce will be bubbling and thickened. Avoid opening the lid during cooking to keep the heat steady.
- Using two forks, shred the turkey breast directly in the slow cooker. Stir everything together to combine the shredded turkey, corn, and creamy cheese sauce. Let the mixture rest for 5 minutes to thicken slightly.
- Spoon the hot turkey and corn mixture over warm buttered egg noodles. Serve immediately, with extra Parmesan on the side if desired.
