Tips for success
For the best texture, use full-fat sour cream — low-fat versions can curdle or separate during the long cook. If you want a thicker sauce, you can stir in a tablespoon of cornstarch mixed with water after shredding and cook for 10 more minutes.
The chili-bake is forgiving, so feel free to adjust the heat with a diced green chile or a splash of hot sauce.
To get that golden, bubbly cheese top, you can transfer the finished chili-bake to an oven-safe baking dish, sprinkle with extra cheese, and broil for 2–3 minutes. This creates a slightly crispy cheese crust that's irresistible.
Just watch it carefully so it doesn't burn. The slow cooker version is already delicious, but this extra step makes it feel even more like a 'bake.'
Variations
- Spicy Green Chile Version: Add a diced jalapeño or a can of diced green chiles when layering the ingredients. Use a hot tomatillo salsa and top with sliced fresh jalapeños before serving for extra heat.
- Cilantro-Lime Crema: Stir 2 tablespoons of chopped cilantro and the zest of one lime into 1/2 cup of sour cream. Drizzle over the top instead of plain sour cream for a brighter, herby finish.
- Cheesy Cornbread Topping: After shredding the chicken, transfer the chili-bake to a baking dish, top with cornbread batter, and bake until golden. This turns it into a true casserole-style bake.
- Smoky Chipotle Twist: Add 1–2 chipotle peppers in adobo sauce, minced, to the salsa verde before layering. The smoky heat complements the tomatillos and adds depth to the sauce.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth if needed.
- Freezer
- Freeze the cooled chili-bake in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot and bubbly. Or microwave individual portions for 2–3 minutes.
Store leftover chili-bake in an airtight container in the refrigerator for up to 4 days. The flavors continue to meld, making it even better the next day.
Reheat gently in the microwave or on the stovetop, adding a splash of water or chicken broth if it has thickened too much. The avocado and fresh toppings should be added after reheating, not before, to keep them bright and fresh.
You can assemble the entire dish (except the toppings) in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook on low as directed.
You may need to add 30 minutes of cooking time since the ingredients start cold. Alternatively, cook the chili-bake fully, let it cool, and refrigerate for up to 3 days before reheating.
Serving ideas
Serve this chili-bake in deep bowls with a generous spoonful of the creamy sauce. Top with diced avocado, a swirl of sour cream, and a scattering of fresh cilantro. A lime wedge on the side lets everyone add a bright, citrusy finish. This dish pairs well with warm tortillas, crusty bread, or a simple green salad.
For a heartier meal, serve over rice or with tortilla chips for scooping. It's also delicious as a filling for tacos or burritos. The leftovers are fantastic the next day, either reheated as is or used as a topping for nachos. This is one of those versatile recipes that adapts to whatever you're in the mood for.

Crockpot Creamy Avocado Tomatillo Chicken & White Bean Chili-Bake

Ingredients
- 2 lb boneless, skinless chicken breasts
- 2 cans (15 oz each) cannellini beans, drained and rinsed
- 24 oz tomatillo salsa verde
- 1 cup sour cream
- 2 cups shredded Monterey Jack cheese
- 1 ripe avocado, diced
- sour cream, for serving
- fresh cilantro leaves, for serving
- 1 lime, cut into wedges
Instructions
- Place the chicken breasts in the bottom of a 6-quart slow cooker in a single layer, overlapping slightly if needed. Scatter the drained cannellini beans over the chicken. Pour the tomatillo salsa verde evenly over the top. Dollop the sour cream over the salsa, then sprinkle the shredded Monterey Jack cheese over everything. Do not stir.
- Cover the slow cooker with its lid. Cook on LOW for 4 hours, without opening the lid during the first 3 hours, until the chicken is tender and easily shreds. The cheese will melt and the sauce will bubble around the edges.
- Remove the chicken breasts to a cutting board. Using two forks, shred the chicken into bite-size pieces. Return the shredded chicken to the slow cooker and stir gently to combine with the creamy sauce and beans. The chicken must reach an internal temperature of 165°F (74°C) before serving.
- After shredding, let the chili-bake sit in the slow cooker on the warm setting for 5–10 minutes. This allows the sauce to reabsorb into the chicken and beans and the flavors to meld. Stir once more before serving.
- Ladle the chili-bake into warm bowls. Top each serving with diced avocado, a dollop of sour cream, fresh cilantro leaves, and a squeeze of lime from the wedges. Serve immediately.
