Tips for success
To make the sauce extra rich, use full-fat coconut milk and creamy peanut butter. If you prefer a thinner sauce, add a splash of chicken broth or coconut milk after cooking.
For more heat, stir in a pinch of cayenne or extra red curry paste. The lime juice is essential—don’t skip it, as it cuts through the richness and adds a fresh, zesty note.
For the best texture, shred the chicken while it’s still warm. If you want to make this ahead, the cooked chicken can be stored in the refrigerator for up to 4 days.
Reheat gently on the stovetop or in the microwave, adding a little water or coconut milk if the sauce thickens. The flavors deepen overnight, making leftovers even more delicious.
Variations
- Spicy Thai Peanut Chicken: Add 1-2 teaspoons of sriracha or a chopped Thai bird’s eye chili to the slow cooker for extra heat. Increase the red curry paste to 3 tablespoons for a more intense flavor. Serve with extra lime wedges to balance the heat.
- Coconut Peanut Chicken with Vegetables: Add 2 cups of sliced bell peppers, snow peas, or broccoli florets during the last 30 minutes of cooking. The vegetables will soften slightly while retaining a pleasant crunch. This adds color, nutrition, and makes the dish a one-pot meal.
- Peanut-Free Thai Coconut Chicken: Substitute the peanut butter with sunflower seed butter or tahini for a nut-free version. Use coconut aminos instead of soy sauce to keep it gluten-free and soy-free. The sauce will have a different flavor but still be creamy and delicious.
- Thai Peanut Chicken Lettuce Wraps: Instead of serving over rice, spoon the shredded chicken into large lettuce leaves (such as butter lettuce) and top with shredded carrots, cilantro, and crushed peanuts. Drizzle with extra sauce and roll up for a low-carb, fresh meal.

- Reheat
- Reheat on the stovetop over medium-low heat, stirring occasionally, until heated through. Add a splash of coconut milk or water if the sauce has thickened.
Store leftover Thai peanut coconut chicken in an airtight container in the refrigerator for up to 4 days. The sauce may thicken upon chilling; stir in a splash of water or coconut milk when reheating to restore a creamy consistency. Keep the rice and garnishes separate to maintain their textures.
This dish is perfect for meal prep. Cook the chicken and sauce up to 2 days ahead, then refrigerate. When ready to serve, reheat gently on the stovetop or in the microwave. Cook fresh rice and prepare the garnishes just before serving. The flavors meld and deepen overnight, making it even more delicious the next day.
Serving ideas
Serve the Thai peanut coconut chicken over steamed jasmine rice to soak up the luscious sauce. Garnish with crushed roasted peanuts for crunch, shredded carrots for sweetness and color, and fresh cilantro for herbal brightness.
A wedge of lime on the side allows everyone to add an extra squeeze of acidity. This dish also pairs well with rice noodles or quinoa for a different twist.
For a complete meal, add a side of sautéed greens, such as bok choy or green beans, or a simple cucumber salad. The creamy, spicy sauce is also delicious spooned over roasted vegetables.
If you have leftovers, use them as a filling for lettuce wraps or as a topping for baked potatoes. This versatile dish is sure to become a weeknight favorite.

Ingredients
- 2 lb boneless, skinless chicken breasts
- 14 oz full-fat coconut milk
- 1/2 cup creamy peanut butter
- 2 tbsp soy sauce
- 2 tbsp red curry paste
- 2 tbsp fresh lime juice
- 3 cups cooked jasmine rice
- 1/4 cup crushed roasted peanuts
- 1/2 cup shredded carrots
- 1/4 cup fresh cilantro leaves
Instructions
