Tips for success
For the most flavor, let the shredded chicken sit in the sauce for at least 5 minutes before serving. This allows the meat to absorb even more of the coconut-chili glaze.
If you have time, you can also keep the slow cooker on the 'warm' setting for up to 2 hours, but the sauce may thicken further.
When reheating leftovers, add a splash of coconut milk or water to loosen the sauce. The chicken reheats beautifully in the microwave or on the stovetop.
For a fun twist, use the leftover chicken as a filling for tacos or lettuce wraps — the sweet chili coconut flavors work surprisingly well in a tortilla.
Variations
- Spicy Mango Twist: Replace the Thai sweet chili sauce with a mango chili sauce, and add 1/2 cup diced mango during the last 30 minutes of cooking. The sweetness of the mango pairs beautifully with the coconut milk.
- Peanut Coconut Version: Stir in 1/3 cup creamy peanut butter along with the coconut milk and sweet chili sauce. The peanut butter adds richness and a nutty depth. Garnish with crushed peanuts and cilantro.
- Lime and Cilantro: After shredding, stir in the juice of 1 lime and 1/4 cup chopped fresh cilantro. This brightens the dish and adds a fresh, citrusy note that complements the creamy sauce.
- Veggie-Packed: Add 2 cups of chopped bell peppers and 1 cup of snap peas to the slow cooker during the last hour of cooking. This adds color and crunch, making the dish a complete one-pot meal.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. The sauce will thicken when cold; add a splash of coconut milk or water when reheating.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently on the stovetop over medium-low heat, stirring occasionally, until heated through.
Store any leftovers in an airtight container in the refrigerator for up to 4 days. The chicken will keep its moisture if stored with the sauce. Reheat gently on the stovetop or in the microwave, adding a little coconut milk if the sauce has thickened too much.
This dish is perfect for meal prep. The chicken can be cooked up to 3 days ahead and stored in the refrigerator. It also freezes well for up to 3 months. To freeze, cool completely, then transfer to a freezer-safe container. Thaw overnight in the refrigerator before reheating.
Serving ideas
Serve the sweet chili coconut chicken over steamed jasmine rice for a classic pairing. The fluffy rice soaks up the creamy sauce beautifully.
Garnish with fresh Thai basil leaves and sliced red chilies for a pop of color and freshness. A side of steamed vegetables, such as bok choy or green beans, would round out the meal nicely.
For a low-carb option, serve the chicken over cauliflower rice or alongside a crisp green salad. The dish is also delicious in lettuce cups, topped with shredded carrots and cucumber.
The sweet and tangy sauce works well with many grains, so feel free to use quinoa or brown rice instead of jasmine rice.

Creamy Crockpot Sweet Chili Coconut Chicken

Ingredients
- 2 lb boneless, skinless chicken breasts
- 1 can (13.5 oz) full-fat coconut milk
- 3/4 cup Thai sweet chili sauce
- 1 stalk lemongrass, bruised
- 1 tbsp fresh ginger, grated
- 3 cloves garlic, minced
- 2 cups cooked jasmine rice, for serving
- Thai basil leaves, for garnish, to taste
- Sliced red chilies, for garnish, to taste
Instructions
- Place the chicken breasts in the bottom of a 6-quart slow cooker. Pour the coconut milk and Thai sweet chili sauce over the chicken. Add the bruised lemongrass stalk, grated ginger, and minced garlic. Stir gently to coat the chicken evenly.
- Secure the lid on the slow cooker. Cook on LOW for 4 hours, until the chicken is tender and easily shreds. Do not lift the lid during cooking to keep the heat steady.
- Remove the lemongrass stalk and discard. Using two forks, shred the chicken directly in the slow cooker, mixing it into the silky coconut glaze. Let the chicken sit in the sauce for 5 minutes to absorb the flavors.
- Spoon the sweet chili coconut chicken over steamed jasmine rice. Garnish with fresh Thai basil leaves and sliced red chilies.
