Before you start

Before starting, ensure all ingredients are ready to be placed in the slow cooker. Chop the fresh spinach and artichoke hearts into bite-sized pieces to ensure they distribute evenly throughout the sauce.

If using frozen spinach, ensure it is completely thawed and squeezed of all excess water to avoid a watery sauce. Clean your workspace and prepare the slow cooker by placing it on a heat-resistant surface near a power outlet.

Ingredients at a glance (4)
  • 4 pieces boneless skinless chicken breasts
  • 2 cups fresh chopped spinach
  • 1 cup chopped artichoke hearts
  • 8 oz cream cheese, blocked

Instructions

Layering the ingredients

  1. Assemble the slow cooker
Place the raw chicken breasts at the bottom of the slow cooker. Scatter the chopped spinach and artichoke hearts evenly over the chicken. Place the block of cream cheese directly in the center on top of the other ingredients.
Look for Ingredients are layered in the pot
Tip Ensure the chicken is laid out in a single layer for even cooking.

The chicken should be arranged in a single layer at the bottom of the pot. Ensure the block of cream cheese is positioned in the center, directly on top of the vegetables and chicken, allowing it to melt downward as the heat builds inside the slow cooker.

Slow cooking the chicken

  1. Slow cook the dish
Cover the slow cooker with its lid and cook on low for 4 to 6 hours or on high for 2 to 3 hours. The cooking time ensures the chicken reaches an internal temperature of 165°F (74°C).
Look for Chicken is tender and pulls apart easily
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Avoid lifting the lid during the first few hours to maintain a steady temperature.

The chicken is cooked when it is opaque throughout and pulls away easily with a fork. At this stage, the spinach should be soft and wilted, and the artichokes should be tender, creating a fragrant steam that fills the kitchen as the slow cooker does its work.

Shredding and finishing

  1. Shred and serve
Once the chicken is cooked through, use two forks to shred the chicken directly in the slow cooker, incorporating the melted cream cheese, spinach, and artichokes into a thick, uniform sauce. Allow the dish to rest for 5 minutes before serving.
Look for Sauce is creamy and coats the shredded chicken
Tip Stir well to ensure all the cream cheese is fully emulsified with the juices.

The final phase involves breaking down the chicken into shreds and folding it into the melted cheese mixture.

The consistency should be thick and creamy, with no large clumps of cheese remaining. Let the dish sit for a few minutes to allow the sauce to thicken slightly before serving.

Common mistakes

A common mistake is overcrowding the slow cooker with too many ingredients, which can prevent the chicken from cooking through properly. Another error is neglecting to properly thaw and drain the spinach, which introduces unnecessary water and dilutes the sauce.

Finally, avoid lifting the lid frequently during the cooking cycle, as this releases heat and moisture, significantly increasing the total cooking time required for the meal.

How to tell it’s done

The dish is finished when the chicken reaches an internal temperature of 165°F (74°C). You can verify this by inserting a meat thermometer into the thickest part of the chicken breast.

Additionally, the chicken should be easily shredded with a fork, and the sauce should appear glossy and thick, coating the chicken completely without any signs of separation.

  • Poultry: 165°F (74°C) in the thickest part
