Before you start

Before starting, make sure the chicken thighs are thawed if frozen. Pat them dry with paper towels — this helps the sauce cling better. Drain the artichoke hearts and cut them into quarters if they are whole. Measure out the spinach, mozzarella, and butter so everything is ready to layer.

If using a block of mozzarella, shred it and set aside. Cook the penne pasta just before serving, or have it ready in the refrigerator to reheat. The slow cooker should be clean and dry. No need to preheat it.

Ingredients at a glance (7)
  • 2 lb boneless skinless chicken thighs
  • 5 oz fresh baby spinach
  • 14 oz canned artichoke hearts, drained and quartered
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 2 cups shredded whole-milk mozzarella cheese
  • 2 tbsp garlic herb butter
  • 12 oz garlic butter penne pasta, cooked

Instructions

Layer and Set

  1. Layer the Ingredients
Place the chicken thighs evenly across the bottom of a 7-quart slow cooker. Scatter the fresh baby spinach over the chicken, then arrange the quartered artichoke hearts on top. Spoon the condensed cream of chicken soup over the entire mixture, spreading it gently to cover as much as possible.
Look for The chicken thighs should be in a single layer, with the spinach and artichokes evenly distributed.
Tip If the chicken thighs are very large, cut them in half so they cook evenly.
  2. Add Cheese and Butter
Sprinkle the shredded mozzarella cheese evenly over the top of the chicken and vegetables. Dot the garlic herb butter over the cheese in small pieces. Do not stir; leave the layers as they are.
Look for The top of the mixture is covered with cheese and butter pats.
Tip Cut the butter into small cubes so it melts evenly during cooking.

At the end of this phase, the slow cooker insert is filled with chicken thighs at the bottom, topped with spinach, artichokes, soup, cheese, and butter. The ingredients are layered in a neat stack, with the chicken completely covered. The spinach may look bulky but will wilt down during cooking. Everything is ready to be covered and turned on.

Slow Cook and Shred

  1. Slow Cook
Cover the slow cooker and cook on low for 4 hours, or on high for 2-3 hours, until the chicken is tender and reaches an internal temperature of 165°F (74°C). The sauce will be bubbling and the cheese melted.
Look for The chicken should be fork-tender and the sauce thick and bubbly.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Avoid lifting the lid during cooking to keep the heat steady.
  2. Shred the Chicken
Once the chicken is cooked through, use two forks to shred the thighs directly in the slow cooker. Stir everything together gently to combine the chicken, spinach, artichokes, and sauce.
Look for The chicken shreds easily and the sauce is creamy with melted cheese.
Tip Shred the chicken while it's still warm; it will be easier to pull apart.

After several hours, the kitchen smells richly of garlic and herbs. The sauce is bubbling around the edges, and the cheese has melted into a golden blanket.

The chicken is fork-tender and easily shreds into juicy pieces. The spinach has collapsed into the sauce, and the artichokes are tender. The mixture looks creamy and cohesive, with no raw spots.

Serve

  1. Serve Over Pasta
Spoon the creamy chicken mixture over a bed of cooked garlic butter penne pasta. Serve immediately, with extra sauce spooned over the top.
Look for The pasta is coated with the creamy sauce and topped with chicken and vegetables.
Tip Warm the pasta before serving so the sauce doesn't cool down too quickly.

The creamy chicken mixture is spooned over steaming pasta, with the sauce clinging to every piece. The mozzarella pulls into long, stretchy strands as you serve. The dish is hot, fragrant, and ready to eat. The plate is full of color — emerald spinach, golden chicken, and white pasta. It looks comforting and satisfying.

Common mistakes

One common mistake is lifting the lid too often to check on the food, which lets heat escape and extends cooking time. Another is using low-moisture mozzarella that doesn't melt smoothly; whole-milk mozzarella is best.

Adding too much spinach can make the dish watery — stick to the amount listed. Also, do not stir the ingredients before cooking, as the layering helps the chicken cook evenly. Finally, ensure the chicken is fully submerged in the sauce to prevent it from drying out.

How to tell it’s done

The dish is done when the chicken reaches an internal temperature of 165°F (74°C) and shreds easily with a fork. The sauce should be bubbling and slightly thickened, with the cheese fully melted and incorporated.

The spinach will be wilted and dark green, and the artichokes tender. If the sauce seems too thin, remove the lid and cook on high for an additional 15-20 minutes to reduce. Overcooking can dry out the chicken, so check at the minimum time.

  • Poultry: 165°F (74°C) in the thickest part
