Tips for success
For the best texture, don't stir the ingredients during cooking. The cream cheese needs time to melt slowly; stirring too early can create a grainy sauce.
If you prefer a smoother sauce, whisk it gently just before serving. You can also add a splash of chicken broth or milk if the sauce is too thick for your liking. Taste and adjust salt carefully—feta is already salty.
This dish is wonderfully versatile. Serve it over rice, quinoa, orzo, or with warm pita bread. For a low-carb option, spoon it over cauliflower rice or steamed greens.
Leftovers can be shredded and used as a filling for wraps or stuffed into bell peppers and baked. The flavors only get better after a day in the fridge, making it a great make-ahead meal.
Variations
- Add Mushrooms: Sauté 8 oz sliced mushrooms in a little olive oil until golden, then add them to the slow cooker with the spinach. They add an earthy depth that pairs well with the feta and dill.
- Use Chicken Thighs: Swap the breasts for the same weight of boneless, skinless chicken thighs. They stay even more moist and are more forgiving if cooked a little longer. Ensure they reach 165°F (74°C).
- Make It Spicy: Add a pinch of red pepper flakes or a chopped jalapeño along with the dill for a gentle heat that contrasts with the creamy sauce.
- Add Lemon Zest: Stir the zest of one lemon into the sauce just before serving. The bright citrus note lifts the richness and echoes the classic Greek flavor profile.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Stir before reheating, adding a splash of broth if needed.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently in a saucepan over medium-low heat, stirring occasionally, until warmed through. Or microwave in 30-second bursts, stirring between.
Store leftover spanakopita chicken in an airtight container in the refrigerator for up to 4 days. The sauce may thicken when chilled; stir in a splash of chicken broth or milk when reheating to restore a creamy consistency. Reheat gently in the microwave or on the stovetop over low heat until warmed through.
You can assemble the entire dish in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed, adding about 30 minutes to the cooking time to account for the cold start. This is perfect for busy mornings—just set it and go.
Serving ideas
Serve the chicken whole or sliced, with a generous spoonful of the creamy spinach-feta sauce over the top. A side of lemony rice or roasted potatoes complements the Greek flavors beautifully.
A simple green salad with a light vinaigrette adds brightness. Warm pita bread is perfect for sopping up every last bit of sauce.
For a complete meal, add a vegetable side like roasted asparagus or a Greek salad. The dish also pairs well with orzo tossed with olive oil and lemon.
If you have extra sauce, serve it alongside as a dip for bread or spoon it over vegetables. This is a comforting, satisfying dinner that feels both simple and special.

Easy Crockpot Spanakopita Chicken: 4-Ingredient Dinner

Ingredients
- 1 1/2 lb boneless, skinless chicken breasts
- 5 oz fresh baby spinach
- 1 cup crumbled feta cheese
- 2 tbsp fresh dill, chopped
- 8 oz cream cheese, softened
Instructions
- Place the chicken breasts in the bottom of the slow cooker in a single layer, overlapping as needed. Scatter the fresh spinach over the chicken, then sprinkle the crumbled feta evenly over the spinach. Spoon the chopped dill over the top. Place the block of cream cheese on top of everything.
- Cover the slow cooker and cook on LOW for 4 to 5 hours, or on HIGH for 2 to 3 hours, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). The cream cheese will melt into a smooth sauce. If desired, gently stir the sauce before serving.
