Before you start
Before starting, cut the ribeye steak tips into 1-inch cubes if they aren't already. Slice the cremini mushrooms and dice the shallot. Mince the garlic. Measure out the Dijon mustard and beef bone broth.
Let the cream cheese soften at room temperature so it blends smoothly later. Have the wide egg noodles and butter ready for when the sauce is done. No need to brown the beef — the slow cooker will handle everything.
Ingredients at a glance (11)
- 3 lb ribeye steak tips, cut into 1-inch cubes
- 400 g cremini mushrooms, sliced
- 1 shallot, diced
- 4 cloves garlic, minced
- 30 g Dijon mustard
- 350 ml beef bone broth
- 180 g full-fat sour cream
- 60 g cream cheese, softened
- 12 oz wide egg noodles
- 2 tbsp butter
- Fresh parsley, chopped, for serving
Instructions
Layer and Slow-Cook
- Layer the IngredientsPlace the cubed ribeye steak tips, sliced cremini mushrooms, diced shallot, minced garlic, Dijon mustard, and beef bone broth into the slow cooker. Stir gently with a wooden spoon to combine everything evenly.Look for The beef and mushrooms should be well coated with the mustard and broth.Tip No need to brown the beef first — the slow cooker does all the work.
- Cover and Cook on LowCover the slow cooker and cook on LOW for 6 hours, until the ribeye bites are fork-tender and easily shred apart. Let it rest for 3 minutes before slicing.Look for The sauce will be bubbling gently and the beef will be very tender.Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)Tip Resist the urge to lift the lid during cooking — it lets out heat and slows the process.
After layering all the ingredients, the slow cooker should smell richly of beef, mushrooms, and Dijon. The broth will be a deep brown, and the mushrooms will release their liquid as they cook. By the end of the 6 hours, the beef should be so tender that it shreds with a fork. The sauce will be bubbling gently around the edges.
Finish the Sauce
- Finish the SauceAfter 6 hours, uncover and swirl in the full-fat sour cream and softened cream cheese. Stir until the sauce is completely smooth and silky.Look for The sauce should be creamy and uniform, with no streaks of cream cheese.Tip Let the cream cheese soften at room temperature before adding for easier blending.
- Cook the NoodlesWhile the sauce finishes, bring a large pot of salted water to a boil. Cook the wide egg noodles according to package directions until al dente. Drain and toss with the butter.Look for Noodles should be tender but still slightly firm to the bite.Tip Butter the noodles right after draining so they don't stick together.
Once the sour cream and cream cheese are stirred in, the sauce should turn a pale, creamy tan and become completely smooth. It should coat the back of a spoon and have a glossy sheen.
The aroma will be rich, tangy, and utterly comforting. Taste and adjust seasoning if needed — though the broth and Dijon usually provide enough salt.
Serve Over Noodles
- Serve the StroganoffLadle the creamy ribeye Stroganoff and mushrooms over the buttered egg noodles. Garnish with fresh chopped parsley and serve immediately.Look for The sauce should coat the noodles and beef generously.Tip For a richer finish, add an extra pat of butter on top before serving.
The buttered egg noodles should be glistening and separate, ready to catch the creamy sauce. When you ladle the Stroganoff over them, the sauce should pool around the noodles and beef, with mushrooms visible throughout. The parsley adds a fresh, bright finish that contrasts with the richness. Serve immediately while hot.
Common mistakes
One common mistake is lifting the lid during cooking, which lets heat escape and extends the cooking time. Another is adding the sour cream and cream cheese too early — they can curdle if cooked for too long.
Stir them in only after the slow cooker is turned off or just before serving. Also, avoid overcooking the egg noodles; they should be al dente so they don't turn mushy in the sauce. Finally, don't skip the Dijon — it brightens the whole dish.
How to tell it’s done
The Stroganoff is done when the ribeye tips are fork-tender and easily pull apart with a fork. The sauce should be thick, creamy, and velvety, with no visible streaks of cream cheese. The mushrooms should be soft and fully cooked.
If you want to be precise, the beef should reach an internal temperature of at least 145°F (63°C) — but after 6 hours on low, it will be well past that and incredibly tender. Let the beef rest for at least 3 minutes before serving to allow the juices to redistribute.
- Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
