Before you start

Before beginning, ensure all ingredients are measured and ready. If the cream cheese has been in the refrigerator, allow it to sit at room temperature for about 20 minutes to soften; this helps it melt into the sauce more effectively.

Clear your counter space and have your slow cooker positioned near a power outlet. Ensure you have two forks ready for the shredding stage, which will happen after the cooking time is complete.

Ingredients at a glance (7)
  • 2 lb chicken breasts
  • 8 oz cream cheese, softened
  • 12 oz white queso blanco
  • 4 oz diced green chiles
  • 2 tbsp taco seasoning
  • 1 cup shredded Monterey Jack cheese
  • 1 cup guacamole, sour cream, cilantro, lime juice for serving

Instructions

Layering Phase

  1. Layering the slow cooker
Place the raw chicken breasts into the bottom of the slow cooker. Add the cream cheese, white queso blanco, diced green chiles, and taco seasoning on top of the chicken. Ensure the ingredients are evenly distributed to allow for consistent melting and flavor development during the cooking process.
Look for Ingredients layered in the basin
Tip Avoid over-stacking the chicken to ensure even heat distribution.

At the end of this phase, the ingredients should be neatly layered in the slow cooker basin. The chicken is at the bottom, topped with the blocks of cheese and seasonings. There is no need to stir yet, as the slow cooking process will naturally combine these layers as they heat up and melt together.

Slow Cooking Phase

  1. Slow cooking the mixture
Cover the slow cooker and cook on the low setting for four hours. This gentle, low-heat method ensures the chicken remains tender and the cheeses melt into a smooth, homogeneous sauce without separating. Resist the urge to open the lid frequently, as this releases necessary heat and extends the cooking time.
Look for Chicken is fully cooked through and sauce is bubbly
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Check that the chicken reaches an internal temperature of 165°F (74°C) to ensure it is fully cooked.

After four hours, the slow cooker should be emitting a savory, cheesy aroma. The chicken will be fully opaque and submerged in a thick, bubbling sauce.

The cream cheese and queso blanco have melted into a single, cohesive liquid that coats the chicken breasts completely, indicating the mixture is ready for shredding.

Shredding and Finishing Phase

  1. Shredding and finishing
Remove the cooked chicken breasts and shred them using two forks. Return the shredded chicken to the slow cooker basin, stirring it thoroughly into the creamy queso sauce. Sprinkle the shredded Monterey Jack cheese over the top and cover for five minutes until the cheese is completely melted and bubbling. Serve with the guacamole, sour cream, cilantro, and lime juice.
Look for Cheese is melted and mixture is uniform
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Let the shredded chicken rest in the sauce for a few minutes to absorb the maximum amount of flavor before serving.

The final result is a thick, velvety mixture where the shredded chicken is perfectly coated in the queso sauce. The Monterey Jack cheese on top has melted into a smooth, gooey layer. The filling should be hot, fragrant, and ready to be spooned into tortillas or served in a bowl for dipping.

Common mistakes

A common mistake is using chicken that is too cold, which can lower the temperature of the slow cooker significantly. Ensure the chicken is not frozen when added.

Another error is failing to stir the sauce well after shredding the chicken; thorough mixing is necessary to ensure the queso is evenly distributed throughout the meat. Finally, do not over-shred the chicken into a paste; keep some texture for a better mouthfeel.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C). At this point, the breasts should be easy to pull apart with a fork. The sauce will appear thick, glossy, and uniform, with no signs of separation or curdling.

If the chicken still resists shredding, continue cooking for another 20 minutes on low. The final addition of Monterey Jack should be completely melted and bubbly.

  • Poultry: 165°F (74°C) in the thickest part
