Tips for success
For a spicier version, you can add diced jalapeños or a dash of hot sauce to the mixture before cooking. This will enhance the heat and provide a nice contrast to the creaminess of the cheese. Adjust the spice level according to your preferences, but keep in mind that the chorizo itself will already provide a good amount of flavor and mild spice.
If you are serving this dip for a longer period, such as during a party, keep the slow cooker on the 'warm' setting. This will prevent the cheese sauce from cooling and becoming too thick. If it does thicken over time, simply stir in a tablespoon of warm milk or chicken broth to restore the desired creamy, dippable consistency before serving.
Variations
- Tex-Mex Loaded Dip: Add a cup of black beans and a can of drained corn to the slow cooker during the layering phase for extra texture and flavor.
- Green Chile Chicken: Stir in a small can of diced green chiles before cooking to add a tangy, bright flavor that complements the richness of the cheese.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days.
- Freezer
- Freezing is not recommended as the cheese sauce may separate and lose its smooth texture upon thawing and reheating.
- Reheat
- Reheat gently in a saucepan over low heat, stirring constantly, or in the microwave in short bursts, stirring in between until warmed through.
Allow any leftovers to cool to room temperature for no more than two hours before transferring them to an airtight container. Place the container in the refrigerator immediately to keep it fresh.
When properly stored, the dip will remain safe to eat for up to three days. Ensure the container is sealed tightly to prevent it from absorbing other odors in your refrigerator.
You can prepare the ingredients in advance by browning the chorizo and cubing the cheese, storing them in separate containers in the refrigerator.
When you are ready to cook, simply layer everything into the slow cooker as instructed. This prep work saves time on the day of your event, allowing you to just assemble and cook without needing to spend extra time in the kitchen.
Serving ideas
Serve this dip warm directly from the slow cooker for the best experience. Place it in the center of your table surrounded by a variety of dippers such as sturdy corn tortilla chips, pita bread, or even fresh vegetable sticks like celery and bell peppers.
Providing a variety of options ensures that all your guests can enjoy the dish according to their preferences.
For a more substantial meal, scoop the shredded chicken and cheese mixture into warm burrito bowls, over steamed rice, or tucked inside soft flour tortillas.
Top each portion with a sprinkle of fresh cilantro for a bright, herbaceous finish that balances the richness of the cheese. This versatile dish works just as well as a hearty appetizer as it does a main course.
