Tips for success
For the creamiest sauce, use full-fat cream cheese and freshly shredded sharp cheddar. Pre-shredded cheese often contains anti-caking agents that can prevent it from melting smoothly.
If you like a little heat, add a finely diced jalapeño or a teaspoon of chipotle powder along with the poblanos. For extra smokiness, use fire-roasted tomatoes or a pinch of smoked paprika.
To make the cilantro-lime rice, cook 2 cups of white rice according to package directions, then fluff with a fork and stir in the juice of 1 lime, 1/4 cup chopped fresh cilantro, and a pinch of salt.
This rice is the perfect base for the saucy chicken. If you have leftovers, the chicken also makes excellent tacos or burrito bowls.
Variations
- Add Black Beans: Stir in 1 can of drained black beans along with the hominy for extra fiber and heartiness. The beans will absorb some of the sauce and make the dish even more substantial.
- Spicy Chipotle Version: Add 1-2 chipotle peppers in adobo sauce, minced, along with the poblanos. This adds a smoky, spicy kick that pairs well with the creamy cheese sauce.
- Use Chicken Thighs: Swap the chicken breasts for boneless, skinless chicken thighs. Thighs are more forgiving and stay moist even if cooked a little longer. Shred them the same way.
- Make It a Soup: After shredding the chicken, stir in 2 cups of chicken broth and 1/2 cup of heavy cream. Simmer for 10 minutes to create a creamy soup. Serve with tortilla chips.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth if needed.
- Freezer
- Freeze in an airtight container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium heat, stirring occasionally, until hot and bubbling. Add a splash of chicken broth or water to loosen the sauce if needed.
Store leftover chicken in an airtight container in the refrigerator for up to 4 days. Reheat gently in the microwave or on the stovetop, adding a splash of chicken broth or water if the sauce has thickened too much.
You can assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook on low as directed. You may need to add 30 minutes to the cooking time because the ingredients are cold.
Serving ideas
Serve this fiesta chicken over cilantro-lime rice for a complete meal. The rice soaks up the creamy sauce beautifully.
You can also serve it in warm tortillas as tacos, or as a filling for burrito bowls with black beans, corn, and avocado. A dollop of sour cream or a sprinkle of fresh cilantro adds a fresh finish.
For a low-carb option, serve the chicken over cauliflower rice or alongside a simple green salad. The dish is rich and satisfying on its own, but the rice or tortillas help balance the richness.
Leftovers are delicious the next day, either reheated or chilled and used as a filling for quesadillas.
