Tips for success
For a more vibrant presentation, garnish the finished dish with freshly chopped cilantro or sliced green onions. These fresh herbs add a bright contrast to the rich, creamy nature of the sauce.
If you enjoy a bit of extra texture, consider serving the chicken over a bed of fluffy white rice or inside warm flour tortillas to soak up the excess sauce. These additions make the meal more substantial and provide a great way to enjoy every bit of the flavorful, cheesy base.
If you are looking to increase the vegetable content, you can add diced onions or canned black beans to the slow cooker along with the peppers.
Just be mindful that adding more ingredients will release more liquid, so you may need to reduce the amount of extra liquid or cook for a slightly longer period to allow the sauce to thicken. Always adjust the seasoning if you add more ingredients to ensure the flavors remain balanced and the dish stays delicious and well-seasoned.
Variations
- Spicy Poblano Chicken: Add a tablespoon of chopped canned chipotle peppers in adobo sauce to the slow cooker during the assembly phase for a smoky, spicy kick that complements the poblano peppers perfectly.
- Vegetable Loaded Chicken: Include a cup of corn kernels and a half cup of diced red onions during the assembly phase to add sweetness, texture, and extra color to the finished dish.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days.
- Freezer
- Freeze in an airtight container for up to 2 months. Thaw in the refrigerator overnight before reheating.
- Reheat
- Reheat gently on the stovetop over low heat or in the microwave in short intervals until warm throughout, stirring occasionally to keep the sauce smooth.
Allow the leftover chicken to cool completely, but do not leave it out for more than two hours. Once cooled, transfer the chicken and sauce into an airtight container. It can be stored in the refrigerator for up to three days. When ready to eat, reheat gently on the stovetop over low heat, stirring occasionally, or use a microwave-safe dish and heat in short intervals until the chicken is warmed through and the sauce is creamy again.
This dish is an excellent candidate for meal prep. You can assemble the raw ingredients in the slow cooker insert the night before and keep it in the refrigerator, then simply place it into the base and turn it on in the morning.
Note that you may need to add an extra 30 minutes to the cooking time to account for the cold temperature of the insert. This method allows you to have a hot, freshly cooked dinner ready with virtually no effort at the end of a busy day.
Serving ideas
Serve this creamy chicken warm directly from the slow cooker or transfer it to a decorative serving bowl. It pairs beautifully with simple sides like roasted corn, a fresh green salad, or steamed vegetables to balance the richness of the cheese sauce. Because the chicken is already shredded and coated in a flavorful sauce, it is also perfect for filling tacos, topping baked potatoes, or serving over a bowl of warm rice for a comforting, satisfying meal.
Consider setting out a small condiment station with options like sour cream, pickled jalapeños, or additional shredded cheese for those who want to customize their serving. The creamy, mild base of the poblano and cheddar sauce provides a perfect canvas for these toppings.
Whether it is a quick weeknight dinner or a relaxed weekend meal, the versatility of this chicken makes it a reliable staple that can be served in many different ways depending on your preference and the sides you have available.

- 2 poblano peppers, diced
- 1 packet taco seasoning
- 8 oz block of cream cheese
- 1 cup cheddar cheese, shredded
