Tips for success
For the best flavor, use a good-quality condensed cream of mushroom soup—it’s the backbone of the sauce.
If you prefer a thicker sauce, mix 1 tablespoon cornstarch with 2 tablespoons water and stir into the sauce during the last 30 minutes of cooking. For a lighter version, use low-sodium soup and reduce the butter to 1 tablespoon.
To make garlic herb butter, combine 4 tablespoons softened butter with 1 teaspoon minced garlic, 1/2 teaspoon dried parsley, and a pinch of salt. This can be made ahead and refrigerated.
When serving, spoon the sauce generously over the pasta and finish with a sprinkle of fresh parsley if desired—though the video doesn’t include it, it’s a common addition.
Variations
- Add Bacon: Cook 4 slices of bacon until crisp, crumble, and stir into the sauce before serving. The smoky flavor pairs beautifully with the mushrooms and mozzarella.
- Use Chicken Thighs: Swap chicken breasts for boneless, skinless thighs for even more moisture. Cook time remains the same, and the thighs shred easily.
- Spice It Up: Add 1/2 teaspoon red pepper flakes or a dash of hot sauce along with the soup for a subtle kick. Adjust to taste.
- Add Spinach: Stir in 2 cups fresh spinach during the last 15 minutes of cooking until wilted. This adds color and nutrients without altering the creamy texture.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days. The sauce may thicken; add a splash of broth when reheating.
- Freezer
- Freeze the cooked chicken and sauce in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently on the stovetop over medium-low heat, stirring occasionally, until heated through. Add a little chicken broth or milk if the sauce is too thick.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The sauce may thicken when chilled; reheat gently with a splash of chicken broth or milk to loosen it. For best texture, reheat in a saucepan over medium-low heat, stirring occasionally, until heated through.
The chicken mixture can be assembled the night before: layer all ingredients in the slow cooker insert, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook as directed, adding 30 minutes to the cooking time if starting from cold. The pasta can be cooked ahead and tossed with butter, then reheated briefly before serving.
Serving ideas
Serve the creamy mozzarella mushroom chicken over garlic butter penne pasta for a hearty, complete meal. The sauce is rich enough to coat every noodle, and the tender chicken and mushrooms provide satisfying texture. A side salad with a light vinaigrette balances the creaminess.
For a low-carb option, serve over cauliflower rice or zucchini noodles. The dish also works well over mashed potatoes or steamed rice.
Garnish with fresh thyme or cracked black pepper if desired—though the video doesn’t show it, these are common additions. Pair with a crisp white wine, such as Sauvignon Blanc, to complement the creamy sauce.

Creamy Crockpot Mozzarella Mushroom Chicken

Ingredients
- 1 1/2 lb boneless skinless chicken breasts
- 8 oz cremini mushrooms, sliced
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1 1/2 cups shredded whole-milk mozzarella cheese
- 2 tbsp garlic herb butter
- 8 oz garlic butter penne pasta, cooked
Instructions
- Place the chicken breasts in the bottom of a 6-quart slow cooker in a single layer. Scatter the sliced cremini mushrooms evenly over the chicken. Spoon the condensed cream of mushroom soup over the top, spreading it to cover the chicken and mushrooms as much as possible.
- Sprinkle the shredded mozzarella cheese evenly over the soup layer. Dot the top with the garlic herb butter, placing the pats in different spots so the flavor melts throughout.
- Cover the slow cooker and cook on LOW for 4 to 5 hours, or on HIGH for 2 to 3 hours, until the chicken is cooked through and tender. The sauce will be bubbling and the cheese melted.
- Using two forks, shred the chicken directly in the slow cooker. Stir the shredded chicken into the sauce until everything is well combined and coated. The chicken should reach an internal temperature of 165°F (74°C).
- Spoon the creamy mozzarella mushroom chicken over the cooked garlic butter penne pasta. Serve hot, with extra sauce spooned over the top.
