Tips for success
For the best flavor, use a high-quality spiced tomato puree that includes ginger and other makhani spices. If you want a little heat, add a pinch of cayenne or a chopped green chili along with the garlic.
The coconut cream should be full-fat for the richest sauce; light coconut milk will result in a thinner, less satisfying texture.
To make the sauce even more luxurious, you can stir in a tablespoon of butter or ghee at the end. This is optional but traditional in makhani recipes.
For a smoother sauce, you can blend it with an immersion blender before adding the chicken back, but the video shows it chunky with chicken pieces. Serve with basmati rice and naan for a complete meal.
Variations
- Spicy Makhani: Add 1-2 finely chopped green chilies or 1/2 teaspoon cayenne pepper along with the garlic for a fiery version. You can also stir in 1 teaspoon of red chili powder with the tomato puree.
- Vegetarian Version: Replace the chicken with 1 1/2 pounds of cubed paneer or firm tofu. Add them in the last 30 minutes of cooking, just to heat through. Use a vegetarian spiced tomato puree and check that the coconut cream is dairy-free if needed.
- Creamy Cashew Makhani: For an extra-rich sauce, stir in 1/4 cup of cashew butter or a handful of soaked cashews blended into a paste along with the coconut cream. This adds a subtle nutty sweetness and makes the sauce even more velvety.
- Herb-Infused: Add a cinnamon stick, 2 green cardamom pods, and a bay leaf along with the garlic for a more aromatic, complex flavor. Remove them before serving. This gives the curry a traditional Indian depth.

Creamy Crockpot Makhani Chicken Thighs: Dump-and-Go

Ingredients
- 6 boneless skinless chicken thighs
- 1 1/2 cups spiced tomato puree (makhani-style)
- 4 cloves garlic, minced
- 1 can (13.5 oz) coconut cream
- 1/2 cup fresh cilantro leaves, chopped
Instructions
- Place the chicken thighs in the bottom of the slow cooker in a single layer. Pour the spiced tomato puree over the chicken, then sprinkle with the minced garlic. Do not stir—just let the ingredients sit as they are.
- Pour the coconut cream over the top of the tomato sauce, then scatter the chopped cilantro over everything. Do not stir—the layers will blend as the slow cooker works.
- Cover the slow cooker and cook on low for 4 to 5 hours, or until the chicken is tender and cooked through. The sauce will bubble gently and thicken slightly. Do not lift the lid during the first 3 hours.
- After 4 hours, check the chicken with an instant-read thermometer. Insert it into the thickest part of a thigh; it should read at least 165°F (74°C). The chicken should shred easily with a fork.
- Once the chicken is cooked through, give the sauce a gentle stir to combine the layers. Serve the curry hot over steamed basmati rice with warm naan on the side. Garnish with extra cilantro if desired.
