Before you start

Before starting, ensure your slow cooker insert is clean and dry. There is no need to brown the chicken beforehand, as the slow cooker will braise the meat to perfection. Have your lemon sliced into thin rounds to ensure they release their juices effectively during the cooking cycle.

Ensure your cream cheese is at room temperature for at least 30 minutes before placing it in the cooker to help it melt more evenly during the initial stages of the cooking process.

Ingredients at a glance (4)
  • 2 lb boneless skinless chicken thighs
  • 1 large lemon, sliced
  • 1 tbsp lemon pepper seasoning
  • 8 oz cream cheese

Instructions

Preparation and Layering

  1. Layer the ingredients
Place the boneless skinless chicken thighs into the bottom of the slow cooker, arranging them in a single layer. Distribute the lemon slices evenly between the pieces of chicken to ensure the citrus flavor permeates the meat during the slow cooking process.
Look for Chicken should be tiled edge to edge.
Tip Ensure the chicken is arranged in a relatively flat layer for even heat distribution.

The chicken should be arranged in a tight, uniform layer covering the bottom of the slow cooker. The lemon slices should be tucked between the thighs to ensure even distribution. The surface should look neat, with the cream cheese block sitting squarely on top of the chicken, ready to begin the slow braising process once the lid is closed.

Slow Cooking

  1. Season and add cream
Sprinkle the lemon pepper seasoning over the chicken and lemon slices. Place the block of cream cheese directly on top of the chicken in the center of the slow cooker. Cover with the lid and cook on low for four hours.
Look for Seasoning should be distributed evenly.
Tip Do not stir the ingredients before starting the cooking cycle.

During this phase, the aroma of lemon and warm poultry will begin to fill the kitchen. The cream cheese will have softened significantly and started to melt into the bottom of the slow cooker.

Upon checking, the chicken should look cooked through and tender, with the lemon slices softened and translucent, having released their aromatic oils into the surrounding sauce.

Finishing the Sauce

  1. Finish and serve
Once the cooking time is complete, ensure the chicken has reached an internal temperature of 165°F (74°C). Stir the now-softened cream cheese into the juices to create a smooth, creamy sauce. Let the chicken rest for 5 minutes before serving.
Look for Sauce should be thick and creamy.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Whisk the sauce vigorously if any lumps of cream cheese remain after stirring.

After stirring, the sauce should be smooth, creamy, and pale yellow, coating the back of a spoon. The chicken should be completely tender, falling away easily when touched. Ensure the entire mixture is heated through and the sauce has reached a consistent, velvety texture that clings to the chicken pieces before you begin serving.

Common mistakes

A common mistake is overcrowding the slow cooker with too many ingredients, which can prevent the sauce from thickening properly. Another error is opening the lid frequently during the cooking process; every time the lid is lifted, heat escapes, extending the total cooking time and potentially drying out the chicken.

Finally, ensure the chicken thighs are boneless; using bone-in pieces will require a longer cooking time and may result in a more diluted sauce due to the additional moisture released by the bones.

How to tell it’s done

The chicken is done when it is opaque throughout and reaches a safe internal temperature of 165°F (74°C). The meat should be tender enough to pull apart easily with a fork.

Using a digital meat thermometer inserted into the thickest part of the thigh is the most accurate way to verify doneness. Once the chicken reaches this temperature, the sauce should be thick, glossy, and uniform in color, indicating that the cream cheese has fully emulsified with the juices.
