Tips for success
For the best texture, use block cheese and shred it yourself. Pre-shredded cheese contains cellulose and anti-caking agents that prevent smooth melting.
Also, be generous with the stirring when adding the cheese—this helps it melt evenly and keeps the sauce from breaking. If the sauce becomes too thick after sitting, stir in a splash of warm milk to restore a creamy consistency.
To make the jalapeno rings extra charred, place them in a dry skillet over high heat for a couple of minutes per side until they develop dark spots.
This adds a smoky depth that pairs beautifully with the creamy mac. For an even crunchier topping, toast the crushed crackers in a little butter before sprinkling over the finished dish.
Variations
- Extra Spicy: Add 1 teaspoon of crushed red pepper flakes or a diced serrano pepper along with the jalapenos. For even more heat, stir in 1/2 teaspoon of cayenne with the cheese.
- Smoky Bacon: Use smoked bacon and add 1 teaspoon of smoked paprika with the cheese. Top with extra crumbled bacon and a drizzle of hot sauce before serving.
- Veggie Loaded: Add 1 cup of frozen corn and 1/2 cup of diced red bell pepper with the pasta. Omit the bacon for a vegetarian version, or use a plant-based bacon substitute.
- Cheesy Herb: Stir in 2 tablespoons of chopped fresh chives or parsley with the cheese. Finish with a sprinkle of fresh thyme leaves before serving.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Add a splash of milk when reheating to restore creaminess.
- Freezer
- Freeze in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat individual portions in the microwave, stirring halfway, or on the stovetop over low heat with a splash of milk until hot and creamy.
Leftover mac and cheese can be stored in an airtight container in the refrigerator for up to 4 days. Let it cool to room temperature within 2 hours of cooking before refrigerating. The sauce will thicken as it cools, so add a splash of milk when reheating to bring back the creamy texture.
The slow cooker method is perfect for make-ahead meals. Cook the mac and cheese as directed, then keep it on the warm setting for up to 2 hours before serving.
For longer storage, refrigerate the cooled dish and reheat portions in the microwave or on the stovetop with a little milk. The topping is best added just before serving to maintain its crunch.
Serving ideas
Serve this jalapeno popper mac and cheese as a hearty main dish with a simple green salad or roasted vegetables on the side.
It also shines as a side dish alongside grilled chicken, burgers, or barbecue. The creamy, spicy pasta is filling enough to stand alone, making it a versatile addition to any meal.
For a party, keep the slow cooker on warm and let guests serve themselves. Top with extra crumbled bacon, fresh jalapeno slices, and a sprinkle of chopped cilantro if desired. The dish stays creamy and warm for hours, making it an ideal potluck or game-day offering.
