Before you start

Before beginning, ensure the slow cooker is placed on a stable, heat-resistant surface away from any water sources. Verify that the chicken breasts are fully defrosted if they were previously frozen, as cooking from frozen can lead to uneven temperatures.

Have a clean cutting board and two forks ready for the shredding stage, and ensure the cream cheese is at room temperature to help it melt more efficiently once the cooking cycle begins.

Ingredients at a glance (4)
  • 1.5 lb boneless, skinless chicken breasts
  • 4 oz canned diced green chiles, drained
  • 1 packet taco seasoning
  • 8 oz cream cheese, softened

Instructions

Preparation and layering

  1. Assemble the slow cooker
Place the raw chicken breasts into the bottom of the slow cooker basin. Evenly scatter the diced green chiles over the chicken, then sprinkle the taco seasoning packet over the top of the ingredients.
Look for all ingredients are layered
Tip Ensure the chicken is in a single layer for even cooking.

At this stage, the slow cooker should contain the raw chicken, chiles, seasoning, and cream cheese arranged in clear layers. Ensure that the chicken is resting at the base of the basin and that the cream cheese is placed prominently in the center.

The countertop should be clear, and all ingredients should be ready to be covered immediately to start the slow cooking process without delay.

Slow cooking process

  1. Add cream cheese and cook
Place the block of cream cheese directly in the center of the slow cooker on top of the seasoned chicken. Cover the slow cooker with the lid and cook on low heat for four hours or until the chicken reaches an internal temperature of 165°F (74°C).
Look for chicken is tender and cooked through
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Do not stir before cooking, as the ingredients will meld during the process.

During the cooking phase, the slow cooker will release aromatic, savory scents as the chicken juices and spices combine. The cream cheese will gradually soften and melt into the surrounding ingredients. Periodically verify that the device is running on the correct low heat setting and that the lid remains firmly in place to trap the steam and ensure the chicken cooks thoroughly.

Shredding and finishing

  1. Shred and serve
Once the chicken is fully cooked, remove it from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker and stir well with the melted cream cheese and juices until everything is combined and creamy. Let it rest for five minutes before serving.
Look for mixture is smooth and creamy
Tip Using two forks makes shredding chicken effortless.

Once the cooking is finished, the chicken should look opaque and be very tender. The sauce should appear smooth, creamy, and well-distributed after the chicken is shredded and folded back into the mixture. The final texture should be thick enough to coat the chicken without being overly watery, indicating that the flavors have successfully melded into a cohesive and delicious meal.

Common mistakes

Avoid lifting the slow cooker lid frequently, as each time it is opened, valuable heat escapes and the cooking time increases significantly. Do not stir the ingredients before the cooking process is complete, as this can disrupt the layering and prevent the cream cheese from melting properly into the juices.

Ensure the meat is not crowded, as this can result in uneven cooking and cold spots that might not reach the required safe internal temperature.

How to tell it’s done

The chicken is considered done when it reaches a safe internal temperature of 165°F (74°C). Use a digital meat thermometer inserted into the thickest part of the chicken breast to verify.

Once this temperature is reached, the meat should pull apart easily with two forks. If the chicken still feels firm or resists shredding, continue cooking for an additional 20 minutes before checking the temperature again to ensure food safety.

  • Poultry: 165°F (74°C) in the thickest part
