Tips for success
To achieve the best flavor, allow the finished dish to sit for about five minutes after turning off the slow cooker. This short resting period helps the sauce thicken slightly and allows the flavors to settle, making each bite more harmonious. If the mixture is too thick for your preference, add a tablespoon of broth at a time until the desired consistency is reached, but be careful not to dilute the intense flavors.
The choice of avocado is important; select fruits that are slightly soft to the touch but not mushy, as this ensures the slices hold their shape when placed on top. If you enjoy a bit of extra heat, consider adding a finely diced jalapeño or a dash of hot sauce to the mixture just before serving. These additions can be adjusted according to personal preference, making the recipe adaptable for those who enjoy a spicier profile.
Variations
- Vegetarian Fiesta Bowl: Replace the chicken breast with an extra can of black beans and a cup of frozen corn. Increase the vegetable broth slightly if needed to account for the additional ingredients, ensuring the quinoa cooks through perfectly.
- Spicy Southwest Style: Add a can of diced green chiles along with the Rotel tomatoes. Use a spicy taco seasoning blend and top with sliced pickled jalapeños for an extra kick of heat that pairs well with the creamy cheese.
Storage and make-ahead
- Fridge
- Store in an airtight container for up to 3 days. Cool to room temperature within 2 hours before refrigerating.
- Freezer
- Not recommended, as the texture of the creamy sauce and avocado may degrade significantly upon thawing and reheating.
- Reheat
- Reheat portions in the microwave in 30-second intervals, stirring in between, until heated through to 165°F (74°C).
Store any leftovers in an airtight container in the refrigerator for up to three days. When cooling, ensure the dish reaches room temperature within two hours before placing it into the fridge to maintain food safety.
The creamy nature of the dish means it may thicken significantly when chilled, which is normal for dishes containing quinoa and cheese. Always stir well when reheating to redistribute the moisture and ensure an even temperature.
While this dish is best served freshly made, you can prepare the ingredients ahead of time by keeping the diced chicken and rinsed quinoa in separate containers in the refrigerator. The taco seasoning can also be pre-mixed.
This reduces the active assembly time to mere seconds when you are ready to start the slow cooker. Do not combine the liquid and dry ingredients until you are ready to begin the cooking process to ensure the texture of the quinoa remains perfect.
Serving ideas
Serve these burrito bowls in wide, shallow bowls to showcase the beautiful colors of the toppings. A generous squeeze of fresh lime juice is essential right before eating, as it wakes up the savory spices and provides a bright, refreshing contrast to the creamy, cheesy base.
Ensure that each serving gets a good amount of the avocado and cilantro, as these fresh elements are what elevate the dish from a simple pantry meal to something special.
For a more substantial meal, you can serve these bowls alongside warm flour or corn tortillas, allowing guests to build their own smaller tacos if they wish.
Alternatively, a side of crisp tortilla chips provides a satisfying crunch that complements the creamy texture of the quinoa and chicken. Regardless of how you choose to serve it, ensure the bowls are warm, as the cheese-based sauce is most appealing when it is smooth and melted.
