Tips for success
For the best flavor, use freshly squeezed lime juice rather than bottled. The zest of the lime can also be added along with the juice for an extra citrusy kick. If you prefer a spicier dish, add a chopped jalapeño or a dash of hot sauce along with the peppers.
To make this a complete meal, serve the fajita chicken over steamed rice or with a side of refried beans. Leftovers can be used in quesadillas, tacos, or as a topping for nachos. The sauce thickens as it sits, so add a splash of chicken broth or water when reheating if needed.
Variations
- Spicy Chipotle: Add 1-2 chipotle peppers in adobo sauce, minced, along with the peppers. This adds a smoky, spicy depth that pairs beautifully with the creamy sauce. Reduce or omit the lime for a less tangy kick.
- Chicken Thighs: Swap the chicken breasts for boneless, skinless chicken thighs. They are even juicier and more forgiving. Cooking time remains the same. Shred the thighs after cooking and proceed as directed.
- Veggie-Packed: Add 1 cup of sliced mushrooms or zucchini along with the bell peppers. These vegetables cook down and add extra heartiness. You may need to reduce the chicken to 1 pound to keep the slow cooker from overfilling.
- Taco-Style: Serve the creamy chicken in hard taco shells with shredded lettuce, diced tomatoes, and a drizzle of hot sauce. The creamy filling contrasts nicely with the crunchy shells and fresh toppings.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth or water if the sauce has thickened.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot and bubbling. Add a little chicken broth or water to restore the creamy texture.
Cool any leftover chicken completely, then store in an airtight container in the refrigerator for up to 4 days. The flavors continue to meld, making the leftovers even more delicious.
Reheat gently in the microwave or on the stovetop, adding a little water or broth to loosen the sauce if needed.
The peppers and onions can be sliced up to 2 days ahead and stored in the refrigerator.
The chicken can be placed in the slow cooker with the lime juice and refrigerated overnight; add the sour cream and cheese just before cooking. This makes the morning even easier—just set the slow cooker and go.
Serving ideas
Serve the creamy fajita chicken in warm flour tortillas, topped with extra shredded cheese, fresh cilantro, or a dollop of sour cream.
The creamy chicken pairs well with a crisp green salad or Mexican rice. For a low-carb option, serve the chicken over lettuce wraps or cauliflower rice.
This dish is also wonderful as a filling for burritos, enchiladas, or stuffed peppers. The sauce is rich and flavorful, so it stands up well to being wrapped or baked.
For a family-style dinner, set out the chicken, tortillas, and a variety of toppings like salsa, guacamole, and shredded lettuce.
