Before you start

Before you begin, ensure you have all your ingredients measured and ready. Clean your work surface thoroughly and prepare the chicken by cutting it into uniform, bite-sized pieces.

If your frozen vegetables are still icy, let them sit in a colander until they reach room temperature. Having your slow cooker positioned in a clear, accessible area will make the assembly process seamless and efficient for you.

Ingredients at a glance (4)
  • 1.5 lb boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 lb dry cavatappi pasta
  • 2 cups frozen mixed vegetables, thawed
  • 2 cups creamy sauce base

Instructions

Layering the ingredients

  1. Prepare the slow cooker base
Place the bite-sized chicken breast pieces into the bottom of the slow cooker. Add the dry cavatappi pasta and the frozen mixed vegetables on top of the chicken to ensure even distribution.
Look for Ingredients are layered evenly in the cooker.
Tip Ensure the chicken is cut into uniform pieces so it cooks at the same rate as the pasta.

At this phase, the ingredients should be neatly layered in the slow cooker. The chicken should be at the base, followed by the dry pasta and the vegetables. Ensure that the vegetables are evenly distributed so they do not clump together during the cooking process. Everything should look organized and ready to be submerged in the creamy sauce.

Adding the creamy base

  1. Add the creamy liquid
Pour the creamy sauce base over the chicken, pasta, and vegetables. Ensure the liquid covers the pasta as much as possible to allow for proper hydration during the cooking process.
Look for Liquid is poured evenly over the solid ingredients.
Tip Using room temperature sauce base can help the slow cooker reach the target temperature faster.

Once the creamy sauce base is poured over the ingredients, it should begin to settle around the pasta and vegetables. You might notice the sauce starting to seep toward the bottom of the slow cooker. Ensure the liquid is distributed as evenly as possible to prevent any dry spots. The slow cooker is now ready to be covered and started.

Final cooking and serving

  1. Cook and serve
Cover the slow cooker and cook on high for 4 hours until the pasta is tender and the chicken reaches 165°F (74°C). Stir the mixture well before serving into shallow bowls.
Look for The sauce is thickened and creamy, and the pasta is al dente.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Stirring right before serving helps incorporate any sauce that may have thickened on the sides.

When the cooking process is complete, the pasta should be tender and the sauce should have thickened beautifully. The chicken will be fully cooked and incorporated into the creamy mixture.

The kitchen will have a pleasant, savory aroma. Give the mixture a final, gentle stir to combine all the textures before portioning it into shallow serving bowls.

Common mistakes

A common mistake is using too much liquid or not enough pasta, which can result in a thin, watery sauce. Always measure your ingredients precisely according to the recipe.

Another error is opening the slow cooker lid too frequently, which allows heat to escape and increases the total cooking time significantly. Avoid overcrowding the cooker, as this prevents the ingredients from reaching the necessary temperature for safe and even cooking.

How to tell it’s done

The dish is done when the pasta reaches an al dente texture and the chicken is cooked through. Use a digital meat thermometer to verify that the chicken has reached an internal temperature of at least 165°F (74°C).

The sauce should be thick, creamy, and clinging to the pasta, with no signs of separation. Let the dish rest for five minutes before serving to allow the sauce to set slightly.

  • Poultry: 165°F (74°C) in the thickest part

Coming up in Part 3: common questions

  • Can this be made in a smaller slow cooker?
  • Why is the pasta too soft?
  • How can the sauce be thinned if it gets too thick?
