Tips for success
To add a bit of heat, consider stirring in a small amount of diced jalapeños or a dash of hot sauce once the chili is finished.
This allows you to customize the spice level for different preferences without altering the base recipe. Always taste the chili before adding extra salt, as the ranch seasoning can already be quite savory.
If you are serving this for a crowd, set up a topping bar with shredded cheddar cheese, diced green onions, sour cream, and fresh cilantro.
These additions provide a fresh contrast to the rich, creamy chili and allow guests to customize their bowls. Serving with a side of warm cornbread can also round out the meal perfectly.
Variations
- Spicy Chicken Chili: Add a can of diced green chiles and a teaspoon of cayenne pepper to the slow cooker before starting. This adds a nice kick of heat that cuts through the creaminess of the cheese.
- Vegetable-Packed Chili: Stir in a cup of frozen bell peppers or diced zucchini during the last hour of cooking. This adds extra texture and color to the dish without significantly changing the flavor profile.
Storage and make-ahead
- Fridge
- Store in an airtight container for up to 3 to 4 days.
- Freezer
- Freeze in freezer-safe containers for up to 3 months. Thaw in the refrigerator overnight before reheating.
- Reheat
- Reheat on the stovetop over low heat, stirring occasionally, or in the microwave in 1-minute intervals until heated through.
Store any leftover chili in an airtight container to maintain its quality and flavor. It is important to let the chili cool for no more than two hours before placing it in the refrigerator to ensure food safety.
Properly stored, it will remain delicious for several days, often tasting even better the next day as the spices have more time to meld.
This dish is an excellent candidate for making ahead. You can prepare the ingredients and keep them in the slow cooker insert in the refrigerator overnight, then simply place it in the base and turn it on in the morning. Note that you may need to add a few extra minutes to the cooking time if starting with cold ingredients.
Serving ideas
Serve the chili hot in wide, shallow bowls to showcase the texture of the shredded chicken and colorful vegetables.
A ladle is the best tool for portioning to ensure each serving gets a good mix of chicken, beans, corn, and the creamy sauce. The warmth of the chili makes it an ideal meal for colder evenings or casual gatherings.
Pair this dish with simple sides that complement its richness. A side salad with a light vinaigrette or some crusty bread for dipping works wonders. Because the chili is already quite filling and creamy, keep the accompaniments relatively simple to allow the main flavors to shine through without overwhelming the palate.

Creamy Crockpot Chicken Chili for Easy Weeknight Dinners

Ingredients
- 4 breasts boneless skinless chicken breasts
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes
- 1 packet ranch seasoning mix
- 2 tbsp chili seasoning
- 8 oz cream cheese
Instructions
- Place the raw chicken breasts at the bottom of your slow cooker. Add the black beans, corn, and diced tomatoes on top of the chicken. Sprinkle the ranch seasoning and chili seasoning evenly over the mixture, then place the block of cream cheese directly in the center.
- Cover the slow cooker with the lid and cook on low for 4 to 6 hours or on high for 2 to 3 hours. The chicken is finished when it reaches an internal temperature of 165°F (74°C) throughout the thickest part of the meat.
- Once cooked, use two forks to shred the chicken directly inside the slow cooker. Stir the mixture well so the melted cream cheese combines with the juices to create a thick, creamy sauce. Let the chili rest for 5 minutes before serving in bowls.
