This Crockpot Cajun Chicken and Sausage Alfredo is the kind of dinner that tastes like you spent hours fussing, but it’s actually a dump-and-go slow cooker meal.

Chicken breasts, smoked andouille, Cajun seasoning, cream, and parmesan simmer together until the chicken shreds and the sauce turns velvety. Toss it with penne and dinner is done.

There are slow cooker recipes that require browning, deglazing, and a dozen steps, and then there are the ones you make on a busy Tuesday.

This one is firmly in the second camp: you layer the chicken, sausage, seasoning, cream, and broth in the crockpot, walk away for four hours, and come back to a sauce that tastes like it simmered all day.

The Cajun seasoning brings heat and depth, the andouille adds smoky richness, and the parmesan melts into a creamy finish. Served over penne, it’s a complete meal that feels indulgent but is surprisingly simple.

Ingredients

Makes 6 servings · serves 6

  • 12 oz smoked andouille sausage, sliced into coins
  • 2 tbsp Cajun seasoning
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup freshly grated parmesan cheese
  • 12 oz penne pasta
  • Chopped fresh parsley, for garnish, to taste
  • Extra Cajun seasoning, for dusting, to taste
Contains: gluten, milk

Why this recipe works

Cooking the chicken low and slow in the cream and broth keeps it moist and tender. The chicken breasts absorb the Cajun seasoning and the smoky flavor from the sausage as they cook, so every bite is seasoned through. Shredding the chicken directly into the sauce lets it soak up even more flavor.

The parmesan is stirred in at the end, not at the beginning, which prevents it from breaking or turning grainy. Adding it after the chicken is shredded allows the cheese to melt into the sauce smoothly, creating the velvety Alfredo texture that coats the penne perfectly.

Notes and substitutions

Use a good-quality Cajun seasoning that you like, since it is the main spice in the dish. Some blends are saltier than others, so taste the sauce before adding extra salt. Smoked andouille sausage is sold in links; look for it near the smoked sausages in the grocery store, and slice it into coins as the video shows.

Heavy cream is the key to the creamy sauce; half-and-half will work but will be thinner. Freshly grated parmesan melts better than pre-shredded, which often contains anti-caking agents that can make the sauce grainy.

The penne can be swapped for any short pasta shape, and the recipe works with chicken thighs for even more tenderness.

  • boneless, skinless chicken breasts: Boneless, skinless chicken thighs (about 1 1/2 lb) work well; cook time is the same, and the meat will be even more tender.
  • smoked andouille sausage: Use any smoked sausage, such as kielbasa or a smoked pork sausage, if andouille is not available.
  • heavy cream: Half-and-half can be used for a lighter sauce, but the sauce will be thinner; stir in an extra tablespoon of parmesan to help thicken.
  • penne pasta: Other short pasta shapes such as rigatoni, fusilli, or farfalle work well in this dish.
