Tips for success
For the most tender beef, always choose chuck and cook on low. High heat can make the meat tough and chewy.
If you're short on time, you can cook on high for 3-4 hours, but low is best for flavor and texture. Also, cut the beef into consistent cubes so they cook at the same rate.
To prevent the asparagus from becoming mushy, place it on top of the beef, not under it. The beef protects it from direct heat.
If you prefer very soft asparagus, you can cook it the whole time; for a crisp-tender bite, add it halfway through. The sauce can be thickened with a cornstarch slurry if it seems thin.
Variations
- Mushroom Beef: Add 8 oz sliced cremini mushrooms along with the beef. They will release moisture and add an earthy flavor that pairs beautifully with the Gruyère.
- Chicken Asparagus: Substitute 2 lb boneless, skinless chicken thighs for the beef. Cook on low for 4-5 hours until the chicken is tender and reaches 165°F (74°C).
- Spicy Kick: Add 1/2 teaspoon red pepper flakes or a minced jalapeño with the garlic for a subtle heat that cuts through the richness.
- Herb Garden: Stir in 2 tablespoons chopped fresh thyme or rosemary with the cheeses for a fragrant, savory note.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator and reheat gently. The sauce may separate slightly; stir well.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot and bubbly. Alternatively, microwave in 30-second bursts, stirring between.
Cool the leftovers to room temperature within 2 hours, then store in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; reheat gently on the stovetop or in the microwave, adding a splash of broth or water to loosen it if needed.
You can prep the ingredients a day ahead: cut the beef, trim the asparagus, smash the garlic, and store them separately in the refrigerator. When ready to cook, layer everything in the slow cooker and proceed. The cooked dish also freezes well for up to 3 months.
Serving ideas
Serve this dish over toasted garlic brioche to soak up every drop of the creamy sauce. The bread adds a buttery crunch that contrasts with the tender beef.
You can also serve it over egg noodles, mashed potatoes, or polenta. A simple green salad with a lemon vinaigrette balances the richness.
For a complete meal, add a side of roasted vegetables or a crisp slaw. The dish is hearty enough on its own, but the bread is non-negotiable for sauce-dipping.
Garnish with fresh thyme or parsley if you like, though the recipe is delicious as is. Enjoy it hot, with the sauce bubbling.

Creamy Crockpot Beef and Asparagus Bites

Ingredients
- 2 lb beef chuck stew meat, cut into 1-inch cubes
- 1 lb fresh asparagus spears, trimmed
- 6 cloves garlic cloves, smashed
- 8 oz cream cheese, softened
- 1 1/2 cups shredded Gruyère cheese
- 8 slices toasted garlic brioche slices, for serving
Instructions
- Place the beef chuck cubes in the bottom of a 6-quart slow cooker in a single layer. Scatter the asparagus spears and smashed garlic cloves evenly over the beef. Do not stir; the layering helps the beef cook evenly and the asparagus stay slightly crisp.
- Drop the softened cream cheese in chunks over the beef and asparagus. Sprinkle the shredded Gruyère evenly over the top. Do not stir; the cheeses will melt and create a sauce as the slow cooker works.
- Cover the slow cooker and cook on low for 6 to 7 hours, or on high for 3 to 4 hours, until the beef is fork-tender and the sauce is bubbling. The beef should reach an internal temperature of 145°F (63°C) for safety, but for best tenderness, cook until it shreds easily. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the beef rest in the sauce for at least 3 minutes before serving. This allows the juices to redistribute and the meat to become even more succulent.
- Place a slice or two of toasted garlic brioche on each plate. Using a slotted spoon, ladle the beef and asparagus over the bread, then spoon extra sauce on top. Serve immediately.
