Tips for success
For the best flavor, let the chicken cook on low rather than high; low heat gives the chicken more time to absorb the pineapple and chipotle flavors.
If you're in a hurry, high heat works, but the chicken may be slightly less tender. Always use an instant-read thermometer to ensure the chicken reaches 165°F (74°C) for safety.
To make the dish even more flavorful, you can sear the chicken breasts in a hot skillet with a little oil before adding them to the slow cooker. This adds a golden crust and deeper flavor.
However, the video does not show this step, so it's optional. If you do sear, be sure to deglaze the pan with a splash of chicken broth and add those juices to the slow cooker.
Variations
- Mild version: Use only 2 chipotle peppers and omit the adobo sauce, or substitute 1 teaspoon of smoked paprika for a gentle smokiness without the heat.
- Extra cheesy: Stir in an additional 1/2 cup of shredded Monterey Jack or pepper Jack cheese along with the cheddar for an even richer, creamier sauce.
- Taco filling: Shred the chicken and use it as a filling for crunchy or soft tacos. Top with shredded lettuce, diced tomatoes, and a dollop of sour cream.
- Spicy kick: Add 1 teaspoon of ground cumin and 1/2 teaspoon of smoked paprika to the chipotle puree for extra depth and warmth.
Storage and make-ahead
- Fridge
- Store in an airtight container in the fridge for up to 4 days. Reheat gently on the stovetop or microwave, adding a splash of broth if needed.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the fridge before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot. Or microwave in 30-second bursts, stirring between, until heated through.
Store any leftover fiesta chicken in an airtight container in the refrigerator for up to 4 days.
The sauce will thicken as it cools; stir in a splash of chicken broth or water when reheating to restore the creamy texture. Let the dish cool for no more than 2 hours before refrigerating.
You can assemble all the ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed. You may need to add 30 minutes to the cooking time since the ingredients start cold.
Serving ideas
Serve this fiesta chicken over a bed of fluffy cilantro-lime rice, which soaks up the creamy sauce beautifully. It also works wonderfully as a filling for tacos, burritos, or quesadillas. For a low-carb option, serve it over cauliflower rice or in lettuce cups.
Top with fresh cilantro, diced avocado, or a squeeze of lime juice for brightness.
The dish is rich and hearty on its own, but a side of black beans or a simple green salad rounds out the meal. Leftovers make an excellent next-day lunch, either reheated or cold in a wrap.

Creamy Chipotle Pineapple Fiesta Chicken

Ingredients
- 3 lb boneless skinless chicken breasts
- 20 oz pineapple tidbits, drained
- 7 oz chipotle peppers in adobo sauce, pureed
- 8 oz cream cheese, softened
- 2 cups shredded sharp cheddar cheese
- cilantro-lime rice, cooked, for serving
Instructions
- Place the chicken breasts in a single layer in the bottom of a 6-quart slow cooker. If they overlap, it's fine, but try to keep them as even as possible so they cook evenly.
- Scatter the drained pineapple tidbits evenly over the chicken. Spoon the pureed chipotle peppers in adobo over the top and spread gently to coat the chicken and pineapple.
- Place the block of cream cheese in the center of the slow cooker. Sprinkle the shredded sharp cheddar over the top, covering the cream cheese and most of the chicken.
- Cover the slow cooker and cook on low for 4 to 5 hours, or on high for 2 to 3 hours, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Once the chicken is cooked, remove the slow cooker insert carefully. Use two forks to shred the chicken directly in the pot, mixing it with the pineapple, chipotle, and melted cheeses until well combined.
- Stir everything together until the cream cheese is fully melted and the sauce is smooth and creamy. If the sauce seems too thick, stir in a splash of chicken broth or water.
- Spoon the fiesta chicken over warm cilantro-lime rice on a plate. Garnish with extra cilantro if desired, though the video shows it plain.
