Tips for success
For the crispiest crust, make sure the butter is evenly spread all the way to the edges of the bread. Use a cast-iron skillet if you have one—it holds heat well and gives an even, golden sear.
Press the sandwich with a heavy spatula or a second skillet to encourage even browning and melting. Let the sandwiches rest for a couple of minutes before slicing; this helps the cheese set slightly and prevents the filling from oozing out too quickly.
If you’re making multiple sandwiches, keep the cooked ones warm in a 200°F (95°C) oven while you finish the rest. This also helps the cheese stay melted.
For a spicier kick, add a pinch of cayenne or a few dashes of hot sauce to the chicken salad. The sandwich is best enjoyed fresh, but if you have leftovers, reheat them in a skillet or toaster oven to restore the crispness.
Variations
- Spicy Chicken Melt: Add 1–2 teaspoons of hot sauce or a pinch of cayenne pepper to the chicken salad. Use pepper jack cheese instead of cheddar for an extra kick. Serve with cool ranch dressing for dipping.
- BBQ Chicken Melt: Replace the garlic mayo with a thin layer of barbecue sauce on the inside of the bread. Mix 2 tablespoons of barbecue sauce into the chicken salad. Use smoked gouda or cheddar cheese for a smoky flavor.
- Herb and Lemon Melt: Stir in 2 tablespoons of chopped fresh parsley or dill and the zest of one lemon into the chicken salad. Use a mild cheese like mozzarella or havarti. The lemon brightens the creamy filling.
- Veggie-Loaded Melt: Add extra finely diced celery, bell pepper, or shredded zucchini to the filling. Sauté the vegetables briefly to soften them before mixing. Use a combination of cheeses like cheddar and Swiss for a richer flavor.
Storage and make-ahead
- Fridge
- Store leftover chicken salad in an airtight container in the refrigerator for up to 3 days. Keep assembled sandwiches wrapped in foil for up to 2 days.
- Freezer
- Freeze the chicken salad (without bread) in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before using.
- Reheat
- Reheat assembled sandwiches in a skillet over medium heat, flipping once, until the bread crisps and the filling is hot.
Store leftover chicken salad separately from the bread in an airtight container in the refrigerator for up to 3 days. The assembled sandwiches are best eaten immediately, but if you have leftover cooked sandwiches, wrap them in foil and refrigerate for up to 2 days. Reheat in a skillet over medium heat, flipping once, until the bread crisps again and the filling is hot.
The chicken salad can be made up to 2 days ahead. Cook and shred the chicken, then mix with the vegetables, mayo, and cheese. Store in a covered container in the refrigerator.
When ready to serve, assemble the sandwiches and griddle them as directed. You can also pre-butter the bread and keep it in the fridge, but it’s best to spread the butter just before cooking to avoid sogginess.
Serving ideas
Serve the creamy chicken melt hot, straight from the skillet, with the diagonal cut facing up to show off the steamy filling. Pair it with a crisp green salad, a bowl of tomato soup, or a handful of pickles for a satisfying meal. The sandwich is substantial enough to be a main course for lunch or dinner, and it’s also great for a casual get-together.
For a heartier meal, add a side of roasted vegetables or a simple coleslaw. The creamy filling is rich, so a bright, acidic side like a vinaigrette-dressed salad or pickled onions helps balance the flavors.
If serving to a crowd, cut the sandwiches into smaller pieces and serve as appetizers or party bites. Garnish with extra green onions or a sprinkle of paprika for color.

Creamy Chicken Melt on Sourdough

Ingredients
- 1 lb boneless, skinless chicken breast
- 1 tbsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- black pepper, to taste
- salt, to taste
- 1/2 cup diced red onion
- 1/2 cup boiled cubed carrots
- 1/3 cup diced cabbage
- 1/2 cup chopped green onions
- 1/2 cup mayonnaise
- 1 cup shredded cheese (such as cheddar or Monterey Jack)
- 8 slices thick artisan sourdough bread
- 3 tbsp butter, softened
- 1/4 cup garlic mayonnaise
Instructions
- Season the chicken breast on both sides with garlic powder, onion powder, paprika, black pepper, and salt. Heat a large skillet over medium-high heat and add a splash of oil. Sear the chicken for 5 to 7 minutes per side, until deeply golden and cooked through. Transfer to a cutting board and let rest for 5 minutes before shredding.
- Once the chicken has rested, use two forks to shred it into bite-size pieces. Place the shredded chicken in a large mixing bowl. If the chicken is too hot to handle, let it cool slightly but keep it warm enough to mix easily.
- To the bowl with the shredded chicken, add the diced red onion, boiled cubed carrots, diced cabbage, chopped green onions, mayonnaise, and shredded cheese. Stir everything together until well combined. Taste and adjust seasoning with salt and black pepper if needed.
- Spread a thin layer of garlic mayonnaise on one side of each slice of sourdough bread. Flip half the slices so the mayo side faces down and pile a generous amount of the creamy chicken salad on top. Place the remaining bread slices on top, mayo side facing the filling.
- Spread the softened butter evenly over the outside of each slice of bread. Use the back of a spoon or a pastry brush to cover the entire surface. This ensures a golden, crispy crust when griddled.
- Heat a cast-iron skillet over medium heat. Place the sandwiches in the skillet, buttered side down. Cook for 3 minutes, pressing gently with a heavy spatula, until the bottom is deep golden brown. Flip and cook for another 3 minutes, pressing again, until the second side is golden and the cheese is fully melted.
- Remove the sandwiches from the skillet and let them rest for 2 to 3 minutes on a cutting board. This allows the cheese to set slightly and makes slicing easier. Use a sharp knife to cut each sandwich in half diagonally, revealing the steamy filling.
