Before you start

Before beginning, ensure the oven is preheated to 375°F (190°C) to allow for even baking. Prepare the chicken by shredding it into bite-sized pieces and finely chop the fresh spinach.

Have the baking dish ready to go, and ensure the lasagna noodles are cooked and cooled just enough to handle safely. Keeping all components organized on the counter will make the assembly process seamless and quick.

Ingredients at a glance (5)
  • 12 pieces lasagna noodles, cooked al dente
  • 2 cups shredded chicken, cooked
  • 2 cups fresh spinach, chopped
  • 2 cups alfredo sauce, store-bought or made ahead
  • 2 cups shredded mozzarella cheese

Instructions

Filling preparation

  1. Prepare the filling
In a large mixing bowl, combine the shredded chicken and chopped fresh spinach. Toss gently to ensure an even distribution of ingredients, making the mixture ready to roll into the tender pasta ribbons.
Look for mixture is well combined
Tip Ensure the chicken is finely shredded for better rolling.

The chicken and spinach mixture should be perfectly combined, with the spinach evenly distributed throughout the shredded meat.

The mixture should look moist but not watery, ensuring it holds together well when placed onto the pasta noodles during the next stage of the assembly process.

Rolling and assembly

  1. Assemble the rolls
Lay each cooked lasagna noodle flat on a clean surface. Spoon a portion of the chicken and spinach mixture onto the noodle and roll it up tightly. Repeat until all noodles are filled.
Look for noodles are rolled tightly
Tip Pat the noodles dry slightly before filling to prevent slipping.

Each roll should be tight and uniform, with the filling securely contained within the pasta. Arrange the rolls snugly in the baking dish so they support each other, which helps maintain their shape while baking. Ensure the sauce is spread evenly over the tops to encourage browning.

Baking to perfection

  1. Bake the dish
Spread a layer of Alfredo sauce in the baking dish. Arrange the roll-ups seam side down. Top with remaining sauce and mozzarella. Bake at 375°F (190°C) until the chicken reaches 165°F (74°C) and the cheese is bubbly and golden.
Look for cheese is golden brown and bubbling
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Cover with foil for the first 20 minutes to keep the sauce creamy.

The final dish should emerge from the oven with a fragrant, golden crust of cheese and a rich, simmering sauce. The steam should be rising, and the edges of the pasta should be slightly crisp, signaling that the interior is heated through and the flavors have melded perfectly.

Common mistakes

Avoid overcooking the lasagna noodles during the initial boil, as they will continue to soften in the oven. Additionally, refrain from packing the rolls too loosely, as this may cause them to uncoil during the baking process.

Ensure the dish is covered with foil initially if the oven runs hot to prevent the top from browning before the center is heated through, which preserves the creamy texture of the sauce.

How to tell it’s done

The dish is considered done when the mozzarella cheese is melted, bubbling, and exhibits a deep golden-brown hue on the surface. The internal temperature of the chicken must reach 165°F (74°C) to ensure food safety.

Allow the dish to rest for 10 minutes after removing it from the oven to let the sauce set slightly, which makes serving much cleaner and prevents the rolls from falling apart on the plate.

  • Poultry: 165°F (74°C) in the thickest part
