Before you start

Before beginning the assembly process, gather all ingredients and equipment on the counter. Pre-heat the oven to 375°F (190°C) so it is ready when the casserole is assembled.

Shred the chicken if it is not already prepared, and measure out the heavy cream, diced green chiles, cheddar, and mozzarella. Grease the baking dish lightly with cooking spray or oil to prevent sticking.

Ingredients at a glance (6)
  • 3 cups cooked shredded chicken
  • 8 flour tortillas
  • 1 cup heavy cream
  • 4 oz canned diced green chiles
  • 1 1/2 cups shredded cheddar cheese
  • 1 1/2 cups shredded mozzarella cheese

Instructions

Rolling and Arranging

  1. Prepare the Chicken Filling
Place the cooked shredded chicken in a bowl and portion it evenly into eight parts to prepare for assembling the burritos.
Look for The chicken should be shredded finely for easy rolling.
Tip Warm the chicken slightly if it is cold from the refrigerator to make rolling easier.
  2. Roll the Burritos
Place a portion of shredded chicken in the center of each flour tortilla. Roll the tortillas tightly around the chicken filling and arrange them seam-side down in a single layer inside a 9x13-inch baking dish.
Look for The burritos should be packed snugly together to prevent unfolding.
Tip Placing them seam-side down ensures they stay rolled without needing toothpicks.

At the end of this initial phase, the flour tortillas are filled with shredded chicken and rolled into tight, uniform cylinders.

They sit snugly side-by-side in a single layer inside the greased baking dish, seam-side down, ready to be smothered in sauce.

Saucing the Casserole

  1. Prepare the Cheddar Chile Cream Sauce
In a medium saucepan over medium-low heat, combine the heavy cream, canned diced green chiles, and shredded cheddar cheese. Stir continuously until the cheese is completely melted and a smooth, rich sauce forms.
Look for The sauce should be uniform and free of cheese clumps.
Tip Keep the heat low to prevent the cream from separating or scorching.
  2. Sauce the Burritos
Pour the warm cheddar chile cream sauce evenly over the arranged rolled burritos in the baking dish, ensuring all tortillas are well coated.
Look for The sauce should cover the tops and sides of the burritos.
Tip Use a spatula to spread the sauce into the gaps between the burritos.

The cheddar chile cream sauce is smooth, warm, and free of lumps, clinging beautifully to the spoon. Once poured over the burritos, the rich, pale-orange sauce completely coats the rolled tortillas, filling the crevices between them.

Baking and Broiling

  1. Top with Mozzarella
Sprinkle the shredded mozzarella cheese generously and evenly over the sauced burritos, covering the entire surface of the baking dish.
Look for The mozzarella layer should completely obscure the sauce beneath.
Tip Use freshly shredded mozzarella for the best melt and stretch.
  2. Bake and Broil
Bake in a preheated oven at 375°F (190°C) for 15 minutes, then switch the oven to broil for 2 to 3 minutes until the mozzarella cheese is bubbling, sizzling, and blistered golden brown. Verify the internal temperature of the chicken reaches 165°F (74°C) before serving.
Look for The cheese must be bubbling vigorously with deep golden spots.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Watch the broiler closely to prevent the cheese from burning.

The casserole finishes with a spectacular display of bubbling, sizzling cheese. The mozzarella has melted completely and developed deep golden-brown blisters under the broiler, while the edges of the sauce bubble vigorously around the sides of the dish.

Common mistakes

A common mistake is pouring the sauce over cold burritos and baking them for too short a time, which leaves the chicken filling cold in the center.

Another error is using too much heat when melting the cheddar into the cream, which can cause the sauce to split and become greasy. Always melt the cheese over low heat and stir constantly.

How to tell it’s done

The burrito bake is fully cooked when the sauce is bubbling rapidly around the edges and the mozzarella topping is blistered and golden brown.

To guarantee food safety, insert an instant-read digital thermometer into the center of the middle burrito to ensure the chicken filling has reached a safe internal temperature of 165°F (74°C).

  • Poultry: 165°F (74°C) in the thickest part
