Before you start

Before starting, ensure that all ingredients are measured and ready. Cut the chicken into uniform, one-inch pieces to ensure consistent cooking. Preheat the oven to 375°F (190°C) well in advance so it reaches the target temperature.

Have your aluminum foil ready to cover the dish, as this is crucial for the steaming process. Preparing your workspace by clearing clutter will make the assembly process much smoother and faster.

Ingredients at a glance (6)
  • 2 lbs boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 1/2 cups long-grain white rice, uncooked
  • 3 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 1 cup frozen peas
  • fresh parsley, chopped, for serving

Instructions

Mixing the Base

  1. Prepare the Base
Preheat your oven to 375°F (190°C). In a 9x13 inch baking dish, combine the bite-sized chicken pieces, uncooked long-grain white rice, and chicken broth. Stir the mixture well to ensure the rice is evenly distributed among the chicken pieces.
Look for The rice should be completely submerged in the broth.
Tip Ensure the chicken pieces are relatively uniform in size for even cooking.

At this stage, the chicken, rice, and broth should be thoroughly combined in the baking dish. Ensure the rice is completely submerged in the liquid.

The mixture will look quite soupy, but this is exactly what is needed for the rice to absorb the broth and become perfectly tender during the baking process.

Baking the Casserole

  1. Bake the Casserole
Cover the baking dish tightly with aluminum foil. Place it in the oven and bake for 35 to 40 minutes. Carefully remove the foil and check that the chicken is cooked through to an internal temperature of 165°F (74°C).
Look for The liquid should be mostly absorbed and the rice tender.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Keep the foil tight to trap steam, which helps cook the rice perfectly.

Once the timer goes off, the casserole should be aromatic. After removing the foil, the chicken should be fully cooked, and the liquid should be absorbed. If there is still a significant amount of liquid, leave the dish in the oven for a few extra minutes before moving to the topping stage.

Adding Toppings

  1. Add Toppings and Melt
Remove the dish from the oven. Evenly sprinkle the shredded cheddar cheese and frozen peas over the top of the hot casserole. Return the dish to the oven, uncovered, for about 5 to 7 minutes until the cheese is bubbly and melted. Garnish with fresh chopped parsley before serving.
Look for The cheese should be completely melted and slightly golden.
Tip Adding the peas at the end keeps them bright green and prevents them from overcooking.

The final phase involves melting the cheese and heating the peas. The dish is complete when the cheese is fully melted and shows bubbling spots. The peas should be bright and warm. The final texture should be creamy, cohesive, and easy to scoop without being watery or excessively dry.

Common mistakes

Avoid using instant or pre-cooked rice, as it will become mushy and overcook during the long baking time. Another common mistake is failing to seal the foil properly; if steam escapes, the rice will remain hard and undercooked.

Do not skip the resting period after baking, as this allows the moisture to redistribute throughout the dish, resulting in a creamier texture when you finally scoop it onto plates.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C). You can check this by inserting a meat thermometer into the largest piece of chicken in the center of the dish.

The rice should be tender, and the liquid should be mostly absorbed. When you pull the dish from the oven, it should smell savory and fragrant, with the cheese visibly melted and bubbly across the entire surface.
