Tips for success
For the best texture, shred the chicken while it's still warm—it pulls apart more easily and absorbs the sauce better. Use two forks or a hand mixer on low speed for quick shredding.
If you prefer chunkier chicken, cut it into large pieces instead of shredding. The sauce will be thicker the longer it sits, so if making ahead, add a splash of broth when reheating.
To make this dish even more flavorful, you can add a pinch of smoked paprika or garlic powder, though the video doesn't call for it. Keep the recipe as written for the classic version.
For a spicy kick, serve with hot sauce on the side. The leftovers are excellent in tacos or over baked potatoes. This recipe is versatile and forgiving.
Variations
- Add Bacon: Cook 4 slices of bacon until crisp, crumble, and stir into the finished dish for a smoky, salty crunch. This adds a savory depth that pairs well with the sweet corn and cheddar.
- Use Chicken Thighs: Swap the breasts for boneless skinless thighs. They stay even more moist and are more forgiving. Cook on low for 5-6 hours, then shred. The sauce will be slightly richer.
- Spicy Cheddar Corn Chicken: Add a diced jalapeño or a teaspoon of hot sauce to the layers before cooking. The heat contrasts nicely with the sweet corn and creamy sauce. Serve with extra hot sauce on the side.
- Make It Gluten-Free: Use a gluten-free condensed cream of chicken or potato soup, and ensure your cheddar is gluten-free. Serve over rice or quinoa. The rest of the ingredients are naturally gluten-free.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth or milk to restore creaminess.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in the microwave in 30-second bursts, stirring in between, or in a saucepan over medium-low heat, stirring frequently, until hot and bubbly.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; when reheating, add a tablespoon of chicken broth or milk to loosen it. Reheat gently in the microwave or on the stovetop over low heat, stirring occasionally. Do not leave the dish at room temperature for more than 2 hours.
This dish can be assembled the night before. Layer the ingredients in the slow cooker insert, cover, and refrigerate overnight. In the morning, place the insert in the slow cooker and cook on low for 4-5 hours.
Add about 30 minutes to the cooking time since the ingredients are cold. The corn and soup can be measured ahead, but keep the cheese separate until ready to assemble.
Serving ideas
Serve this creamy chicken over steamed white jasmine rice for a classic pairing. The rice absorbs the sauce and balances the richness. For a lower-carb option, serve over cauliflower rice or with a side of steamed green beans.
A simple green salad with a vinaigrette would also cut through the creaminess. The dish is hearty enough to stand alone, but it's even better with a crusty bread for dipping.
Garnish with a sprinkle of chopped fresh parsley or chives if you like, though the video doesn't show it. For extra cheddar flavor, add a little more shredded cheese on top just before serving. This recipe is a family favorite that's sure to please. Enjoy it hot, with extra black pepper on the table.

Creamy Cheddar Sweet Corn Chicken Crockpot Recipe

Ingredients
- 1 1/2 lb boneless skinless chicken breasts
- 2 cups frozen sweet corn kernels
- 1 can (10.5 oz) condensed cream of potato soup
- 2 cups shredded sharp cheddar cheese
- 2 tbsp unsalted butter
- cooked white jasmine rice, for serving
Instructions
- Place the chicken breasts in the bottom of a 6-quart slow cooker in a single layer. Sprinkle the frozen corn evenly over the chicken. Spoon the condensed cream of potato soup over the top, spreading it slightly to cover the corn. Sprinkle the shredded cheddar cheese over the soup, then dot with the butter.
- Cover the slow cooker and cook on low for 4 to 5 hours, until the chicken is tender and cooked through. The internal temperature of the chicken should reach 165°F (74°C) when measured with an instant-read thermometer.
- Remove the chicken breasts to a cutting board and shred them with two forks. Return the shredded chicken to the slow cooker and stir gently to combine with the corn and sauce. Let it sit for 5 minutes to absorb the sauce.
- Stir the mixture well. Taste and add salt and pepper if needed. The soup and cheese add salt, so go easy. If the sauce is too thick, stir in a splash of chicken broth or milk.
- Spoon hot cooked jasmine rice onto plates. Top with a generous scoop of the creamy chicken and corn mixture. Serve immediately.
