Tips for success

For the creamiest sauce, use full-fat condensed cream of chicken soup and freshly shredded sharp cheddar. The soup provides a thick, rich base, and the cheese melts smoothly when added directly.

If you prefer a thinner sauce, you can stir in a splash of chicken broth or milk after shredding the chicken, but the original recipe is intentionally thick and luscious.

Don't skip the butter—it adds richness and helps the sauce come together. If you're watching sodium, you can use low-sodium cream of chicken soup and reduce the amount of added salt.

The artichokes and cheddar already bring plenty of flavor, so you might not need extra seasoning.

Variations

  • Add Bacon: For a smoky twist, cook 4 slices of bacon until crisp, crumble, and stir into the finished dish just before serving. The bacon adds a salty crunch that pairs beautifully with the creamy sauce.
  • Use Chicken Thighs: Swap the chicken breasts for boneless, skinless chicken thighs. They stay incredibly moist and shred easily. Increase the cook time to 5 hours on low for the best texture.
  • Spicy Kick: Add 1/2 teaspoon of red pepper flakes or a dash of hot sauce when layering the ingredients. The heat cuts through the richness of the cheese and adds a pleasant warmth.
  • Vegetarian Version: Omit the chicken and use a can of drained chickpeas or white beans instead. Add an extra can of cream of mushroom soup and increase the cheese to 2 1/2 cups. Cook on low for 3-4 hours until heated through.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Freezer
Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat gently on the stovetop over medium-low heat, stirring occasionally, or in the microwave in 30-second bursts. Add a splash of broth or milk if needed.

Store any leftovers in an airtight container in the refrigerator for up to 3 days. The sauce will thicken as it cools, so you may want to add a splash of chicken broth or milk when reheating to restore the creamy consistency.

You can assemble the uncooked ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed, adding about 30 minutes to the cook time if starting from cold.

Serving ideas

Serve the creamy cheddar spinach artichoke chicken over steamed jasmine rice, which soaks up the rich sauce beautifully.

For a low-carb option, spoon it over cauliflower rice or zucchini noodles. Crusty bread is also a great choice for dipping into the creamy sauce.

This dish pairs well with a simple green salad or steamed vegetables to add freshness.

For a complete meal, consider serving with roasted asparagus or a side of buttery green beans. The creamy, cheesy sauce is indulgent, so light sides balance the richness.

Frequently asked questions

Can this recipe be made ahead of time?
Yes, you can assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed, adding about 30 minutes to the cook time if starting from cold.
Why is the sauce watery?
If the sauce seems watery, it may be because the chicken released excess moisture or the spinach was not fully drained. To fix, remove the lid and cook on high for an additional 15-20 minutes to allow the sauce to thicken. You can also stir in a slurry of 1 tablespoon cornstarch and 2 tablespoons water.
Can this be frozen?
Yes, this dish freezes well. Let it cool completely, then transfer to a freezer-safe container. Freeze for up to 3 months. Thaw overnight in the refrigerator and reheat gently on the stovetop or in the microwave.
What is the best way to shred the chicken?
Use two forks to pull the chicken apart directly in the slow cooker. The meat should be so tender that it falls apart easily. For larger shreds, use a fork in each hand and pull in opposite directions. Avoid over-stirring, which can break the chicken into very small pieces.
Can you use frozen spinach instead of fresh?
Yes, you can use frozen spinach, but thaw it and squeeze out as much liquid as possible before adding. Use about 10 ounces of frozen spinach, thawed and drained, to replace the 5 ounces of fresh spinach. This prevents excess water from making the sauce too thin.

Creamy Cheddar Spinach Artichoke Chicken Crockpot Recipe

Prep 10 minCook 4 hTotal 4 h 10 minServes 6
Creamy cheddar spinach artichoke chicken in a slow cooker, topped with melted cheese and fresh herbs.

Ingredients

  • 1 1/2 lb boneless, skinless chicken breasts
  • 5 oz fresh baby spinach
  • 14 oz canned artichoke hearts, drained and quartered
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 2 cups shredded sharp cheddar cheese
  • 2 tbsp unsalted butter

Instructions

  1. Place the chicken breasts in the bottom of a 6-quart slow cooker in a single layer. Scatter the fresh baby spinach and quartered artichoke hearts over the chicken. Spoon the condensed cream of chicken soup over the top, spreading it slightly to cover as much of the ingredients as possible.
  2. Sprinkle the shredded sharp cheddar cheese evenly over the top. Dot with the butter pieces. Do not stir.
  3. Cover the slow cooker and cook on low for 4 to 5 hours, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). The sauce will be bubbly and the cheese melted.
  4. Using two forks, shred the chicken directly in the slow cooker. Stir everything together to combine the sauce, spinach, artichokes, and chicken. The spinach will wilt further as you stir.
  5. Spoon the creamy chicken mixture over steamed jasmine rice or your favorite grains. Serve hot, directly from the slow cooker.
